About this Cook
I am assistant Clerk in the Court System and have been for 23 years. Married with 2 children of my own and a step-child. I have 4 grandchildren. I love reading, relaxing and visiting my children and grandchildren. My husband and I do alot of cooking together and sample new ingredients
My favorite things to cook
casseroles, slow cooker recipes and itallian
My favorite family cooking traditions
having potluck dinners - we often get together and bring a dish. it's always good, easy and alot of fun
My cooking triumphs
probably feeding approx 30 people at Christmas. We always gather in either mine or my sisters homes and it is a challenge to prepare the whole meal for so many people
My cooking tragedies
forgetting to turn the oven on to bake a casserole with people coming over and dropping a pound cake on the floor

Slow Cooker Lemon Garlic Chicken II
This was delicious. I doubled the sauce even though I only cooked 2 chicken breasts and made linguini as a side. I used the sauce from the crock pot to mix in with my linguini. This will be a regular at my house for my husband and I.

King Ranch Chicken Casserole I
This was delicious - I was not able to use as many tortilla chips as I was concerned about the space and I used rotel tomatoes w/green chilies - Also shared this recipe with a girl I work with who also thought it was very tasty. I did think the chips would be crunchy but maybe if I had used more

Slow Cooker Beef Stew IV
I made this last night and followed the recipe except for omitting the mushrooms and wine because I did not have any. This had no more flavor than when I have just placed everything in the crockpot without taking extra steps. I Was somewhat disappointed that I had taken the time to fry the beef and saute the onions. I did add beef consome instead of water but still no additional flavors that I was looking for.
