Black Bean and Corn Quesadillas
Perfect recipe is perfect. Made some minor changes - substituted white sugar for brown sugar, omitted red pepper flakes because I used a hot salsa, substituted mozzarella/provolone cheese for Monterey Jack. Also garnished with plain greek yogurt instead of sour cream - yum!

Artichoke & Spinach Dip Restaurant Style
I followed the instructions exactly and the dip turned out great! Creamy and cheesy (definitely not healthy if that's what you're looking for!). I garnished with fresh chopped tomatoes and crushed red peppers. Unfortunately, I don't think I'll be making this again but that's only because it's ridiculously impractical (and expensive) to make dips at home when you're living on your own.

Jamie's Cranberry Spinach Salad
Too many ingredients for my budget/skill level, but the spinach/cranberry/almond combination is gold. I made the salad with four ingredients - blanched slivered almonds (I toasted them with butter in a saucepan as directed), dried cranberries, spinach leaves, and Newman's Own balsamic vinaigrette. It was delicious!
