Blueberry Zucchini Bread

This recipe makes LOVELY muffins! I don't own a loaf pan, so I opted to make muffins instead of bread. I did not alter the ingredients in this recipe for the muffins, only the cooking time. I changed the recipe to yield 8 servings, and that made approx a dozen muffins, and I baked them for 20-25 minutes. My BF had never had a baked good with zucchini in it before I made this... he was skeptical at first, but after he tried it, he ate 3 more! I had sat down and had a muffin with a cup of tea and I just couldn't get over how good they were. I think I will prefer to make them as muffins because it's less messy. I will definitely be keeping this recipe on hand and be making it many more times!
