Tiramisu Layer Cake

Reviewed: Aug. 10, 2008
Great cake. Everyone loved it even my husband who is not crazy about tiramisu. Baked exactly as written only using 3 pans for 18 min. For the filling I used the mascarpone cheese recipe on this site, can't find it in my neck of the woods. The frosting I used was a whipped topping recipe with white chocolate pudding, whipped topping and the coffee liqueur. I read the reviews to use double coffee and liqueur and did not. The coffee flavor was plently strong enough for us and we love coffee. Oh yeah , all I had was coffee crystals so i crushed them up a little for the coffee layer and the flecks of coffee looked beautiful and tasted great.

Super Duper Italian Nachos

Reviewed: Aug. 10, 2008
Great nachos! I used an Italian blend of shredded cheese, no onion, chopped fresh seeded tomates, black sliced olives, chopped pepperocinis. I don't like my chips in the microwave so I baked at 350 for about 6 to 8 minutes. This is a wonderful change from reg. nachos. Oh yeah I used the tostitos scoops and made them my little individual bowls stuffed to the brim with the cheese and alfredo sauce. This is a great recipe to add or subtract any of the garnishes so they never would have to be the same each time you make them.

Yuck!! Sorry to give a bad review. I don't see how anyone can compare this with prime rib such as one reviewer stated.

Chocolate Praline Layer Cake

Reviewed: Aug. 3, 2008
This is delicious cake. My changes were to make a 3 layer cake I thought I would double the caramel mixture --- DON'T. My pans overflowed in the oven and I had one big mess. The cake turned out distored because of my error. I believe it was the uglies layers I have ever made. None the less I decided to make a whipped topping frosting (from this website). Mine was white chocolate pudding and whipped topping. I covered the whole thing with it and garnished with grated chocolate and pecans. Turned out great despite the problems.

Bill's Smoked BBQ Baby Back Ribs

Reviewed: Jul. 6, 2008
Excellent! We finished the last 30 min. in a 350 degree oven wrapped in foil with the bbq sauce. This eliminates all that bbq sauce clean up in the smoker.

Key Lime Cheesecake I

Reviewed: Jul. 6, 2008
This was very good. I put about 1/3 cup of shredded coconut in the crust and baked for about 10 min. (be sure to let cool before adding cheesecake mixture). The only change I made was 1/2 cup of key lime juice of 2/3. In my experience the cake was much better the 2nd day after baking.

Two Layer Greek Dip

Reviewed: Jul. 6, 2008
Excellent! Everyone loved this. I did so some changes because I was out of cream cheese so I used 1 cup mayo, 1 cup sour cream and 2 cups feta, everything else was the same. Served with Ritz crackers but pita or tortilla chips would also be good.

This is as good as it looks. I didn't change a thing. Great if you are looking to do a few things ahead of time. I prepared the cake and jello mixture, covered with aluminum foil, refrigerated it overnight and finished the next day.
