My family has family reunions quite a few times a year, so we all bring our favorite dishes to the get together!

Anytime I can make my family or guests ohh and ahh over a meal...it is a triumph! That is the whole reason I cook!
My cooking tragedies
When I first started cooking as a teenager, I tried to make homeade fettucini alfredo. I don't really know what happened, but it ended up in one big ball of a mess!

Salsa Chicken Rice Casserole
I was pleasantly surprised with this recipe. The changes I made was that I cooked my chicken and onions in a little olive oil, then shredded it. I mixed the soups, salsa, and rice together. I used two small pans to have one to freeze for later. I layered it half rice, half cheese, chicken, half rice, then cheese. Made the night before then popped in the oven for an easy week night meal!

Broccoli Cheese Soup
Wow! Yum! I halved the recipe since it was only for 2 people. I had my 9 yo daughter doing a happy dance as she was eating it! I doubled the broccoli and cheese like others suggested, added half a cup of white wine, and 2 cloves of garlic. I also used half and half instead of milk, and a dash of cayenne at the end to give it a little kick. I used the food processor to blend it up because I wanted it smoother. A definite winner!

King Ranch Chicken Casserole I
Made a half batch of this. Sauteed onion and garlic in a litttle olive oil then added soups, half the cheese, and a shredded rotisserie chicken in. Put the chips on the bottom then chicken mixture on top. Baked for 15 minutes at 350 then added the rest of the cheese and baked another 5 minutes Turned out amazing!! Family loved!
