I am a single Mom and work in the medical field as a Care-Giver at night. I normally prepare meals in between my day just right before I hit the sack (and before my child arrives back from school!) so often times I am in search for simple, tasty and healthy slow cooked meals. The prep time fits into my morning "getting ready for bed routine" and when I awake, food is ready to be served!
