Black Magic Cake

I've probably served this cake to over 100 people and everyone has said it's the best cake they've ever had. Its the only recipe I'll use. My secret is Valhrona Chocolate, and a NICE cup of strong coffee. It makes a BIG difference. Even people who don't appreciate nice things will taste the difference. If I'm planning on icing it and need to be sure i'll do a good job I'll evaporate the coffee so it's less than 1 cup but still has all the flavor... so the cake isn't as wet. I didn't have butter milk so I made some with 1 cup of milk and 1 tablespoon of lemon juice set aside for a few minutes.

A good go to cake for any occassion. I like to be gratitious with the lemon rind so it has a nice fresh taste.

Old Fashioned Coconut Cream Pie

Rave reviews at my Soda Shop Themed Party. I don't think anyone took a breath from when the pie was put in front of them until it was gone. Som subs... I didn't have half and half, so I used 2 cups whipped cream, 1 cup skim, and half a package of coconut cream powder - stuff I normally use to bump up the coconut flavor my curry. Comments were helpful to know I didn't have to cook it at LOW heat. After 10 mins I cooked it at medium low heat with a whisk to prevent lumps. Highly suggest using a whisk over a wooden spoon at medium low heat from the get go.... keep stirring or you'll get weird bumps in your filling. After measuring, sift your flour again to avoid bumps. Used smoked sea salt instead of salt and vanilla bean paste instead of extract so there'd be the pretty speckling of vanilla beans in the custard. For the topping I used another reviewer's suggestion... 1 cup fresh whipping cream milk and beat it with generous vanilla (2 table spoons), and 3 tablespoons of icing sugar. A big piping star to make pretty tufts on the top before topping with the last bit of toasted coconut. Wildly successful. Just sit back and soak up the praise now.

Scones

I just made this recipe to the letter. I grated chilled butter rather than cut it in, but used the exact same proportions. A little sweet but very tasty. I'd make it again with Lemon Zest. A keeper recipe. Very easy to make. The key as always is to handle the dough as little as possible. I made nine 2.5 inch circular scones.

Chicken Makhani (Indian Butter Chicken)

Great recipe. I didn't have the garlic ginger paste, but it worked fine. Also used Cream and sour cream instead of half and half and yoghurt because its what I had in the house. Still tastes great. Added a tablespoon of sugar because it tasted a tiny bit bitter.

Coconut Macaroons III

Chocolate Crinkles II

Wow. I think this is the best cookie recipe I've come across at All recipes. VERY impressed. If you are a chocolate lover its' perfect as is, but I recommend adding a teaspoon of cinnamon. Gorgeous cookies.

Chocolate Waffles

I added 4 tablespoons of Frye's Cocoa, 1 well ripened banana, some cinnamon... and it turned out AMAZING. My family raved about the recipe. It's a subtle chocolatey flavor so if you want it more chocolatey, add more chocolate chips! It was good even a day later... resembled chocolate cake :)
