Sweet, Sticky and Spicy Chicken

I wish I had read more reviews because I would've done a few more things differently. It was a good dish, but needs some tweaking to make it to my taste. These are things that I did... 1. I used TABASCO instead of Sriracha. Made the dish pretty spicy. I had one serving, the bf had no complaints. I will try it with Sriracha next time. 2. I like ginger, so I put more. That ended up making the dish spicier. I like spicy food, but this was like "Whoa." I put about 3 teaspoons. I'll stick to two. =P 3. I added half an onion, which was great! Next time, I will add more veggies like bell peppers and the whole onion. 4. I will add more sugar. I like mine sweeter. I may double up on both the honey and sugar. 5. I dredged the chicken, but probably not enough. Or I didn't cook the chicken enough. I didn't get that crunch, but I wanted to stick to a "healthier" chicken, so it's probably better I didn't pan fry it any more than I did. 6. I used low sodium soy sauce. 6. I didn't taste any of it until it was served. I will definitely taste before I serve next time! I like this recipe because it allows you to do so much with it. I'm excited to make it again soon. =)

Mexican Chicken Soup

This was great! I used chicken breast tenders, but I didn't bake them, I broiled them, and then shredded it. I added extra celery, cilantro, and onion (because I really like them), and bought extra avocados. You have to have the avocado! I didn't have any taco seasoning, but I did have Tinga seasoning. It's in the same section as the taco mix, but it's for chicken. It has a smokey, chipotle like flavor. Very good. The only thing I would change is using reduced sodium chicken broth. It was a bit too salty for my taste, but had no complaints for the bf. I'll be making this again! Yummmm!!!!!

Best Big, Fat, Chewy Chocolate Chip Cookie

I looked at quite a few recipes before I chose this one. The reviews seemed good and I had most of the ingredients on hand. I just pulled the first batch out and took a bite, then two, and finished the cookie. It was good, but a little too sweet for me. The boyfriend may think otherwise. He really like cookies in general, and may like the sweetness of this one. I used margarine instead of unsalted butter, so I didn't add any salt to the recipe. And I think that's what made the difference for me. I couldn't taste the hint of salt in the cookie, like in other chocolate chip recipes I've made. I think next time (which will be very soon), I will add a 1/4 tsp of salt, rather than the 1/2 tsp required for the recipe. Other than the sweetness, I really loved the consistency of the cookie. It was full, thick, crunch on the outside and soft in the inside. =)

Mouse's Macaroni and Cheese

This was soooo easy and sooooo good! We couldn't find "American" block cheese, so we picked up some medium cheddar, and it turned out great! I'm going to try it with Sharp cheddar tonight. Since it's a bit on the unhealthy side, I'm going to try to make it with reduced fat cheese and 2% milk, and we'll see how that goes. =P

Robbi's M&M Cookies

awesome! i made these yesterday for my soccer team, and everyone loved them. i used the valentine's day m&m's, so they were very festive. and what's nice, is that when you bit into the cookie, the m&m shell kind of melts into the cookie dough. so that makes it pretty. i didn't have any shortening, so i used regular margarine, only used 1/4 teaspoon of salt, and used 3c cups of flour like the others suggested. i can't wait for st. patty's day, so i can use the green and white m&m's for that. great recipe!

Pebber Nodder (Danish Christmas Cookies)

i really was able to make 100 little cookies. like the others suggested, i doubled the cardamom and cinnamon. then i rolled out the dough and used a little star cookie cutter to make them a little more appealing. i covered half of the cookies with powdered sugar, then i left the other half plain. either way, they were really good! all my students really liked the cookies.

Candy Cane Cookies III

i thought these cookies were great! i rolled a small piece of each colored dough into about two inch pieces, then i picked them up twisted them, then rolled into each other on the cutting board. did that make sense? =) just make sure the board is dry, and only leave a little flour on your fingers, or the dough will not stay and roll together. then i put the twisted, rolled strip on the baking sheet lined with parchment, then i turned the end into a cane. right out of the oven, i poured white sugar on top, and it made them look awesome!

Decorator Frosting

the frosting was good. i used almond extract instead of vanilla because i didn't want the frosting to come out off white. but the funny thing is, after a while, the frosting started turing a little yellow. i think the butter was melting in the piping bag from the heat of my hands. hmm...maybe i might try unsalted butter or something. but the frosting tasted great with the gingerbread cookies.

Gingerbread Men

these cookies were great! i love how it doesn't require all these random ingredients. i was a little bummed about how the shape of the cookies turned out. i actually used a snowflake cookie cutter, and the cookie came out like a flower, instead of a snowflake. but it's ok, because i was able to save the cookie with piping the decorations. i also baked them for 7 minutes, and let them rest on the cookie sheet for 2 mintues after removing them from the oven. overall, everyone was pleased, and the cookies tasted great!

Traditional Mashed Potatoes

i halved the recipe and it was enough to feed 3 people. this was so yummy, it didn't even need any gravy. this was a simple recipe and i will be making it again. i think next time, i'll add some garlic to it. =)

Sweet Corn Bread

these were good. very corn meal-y. i thought it would come out a little more cakey, but that's ok. they weren't that sweet either. i think i'll add a 1/2 c instead of 1/4 c of sugar. i baked 12 large muffins using this recipe using the suggested baking time, and they came out perfect.

Delicious Apple Sauce

this was ok. it took way longer to cook than i thought. i diced the apples up really good, thinking it was mash and cook faster, but it didn't help. i think if i had sliced the apples instead, that may have helped it mash better. but after simmering for a good 20 minutes, they were still a little crispy. i might try again, if i had some extra apples laying around.

Banana Sour Cream Bread

this was really easy to make. i didn't have super ripe bananas, i had just ripe ones, and they worked out just fine. i ran out of sugar, so i used splenda instead, and they tasted great. but had a weird after taste, that i'm assuming is from the splenda. i spooned the batter into a muffin tin, and made 12 good sized banana muffins. i also baked them for 35 minutes. good stuff!

Bread and Celery Stuffing

i don't really like stuffing, but i made it for thankgiving for my family, and i actually really, really liked this one. i chopped the onions and the celery really fine, and my sister didn't even notice they were there (she's a picky eater). because i baked it in a glass baking dish, if i make it again, i'll probably add a little more chicken broth because it was a little dry (maybe because it wasn't stuffed in a turkey). but other than that, i thought it was awesome!

Lemon Shortbread Cookies

i thought that this was an ok recipe. it was hard to zest 2t of lemon, considering i don't have a real zester, but a kind of grater. next, the time to bake is NOT 20-25 minutes. for me it was about 12 minutes. the recipe only makes about 20 cookies too. lastly, to make them a little more lemon-ee, i added a lemon frosting. i mixed powedered sugar, water, some of the lemon extract, and lemon juice, and spread it over the cooled shortbread cookie. the cookie tasted fine, but iw as expecting something a little different...that's why it only got three stars. with all the personal adjustments, then i would give it 5 stars. =)

Soft Chocolate Chip Cookies II

everyone loves these cookies, and they're so easy and quick to make. while the cookies are baking, i usually rotate the baking sheet at 4 minutes,take them out right at 8, and leave on the baking sheet for about 30seconds to 1 minute. these cookies are awesome!!!!

Best Chocolate Chip Cookies

the cookies were easy to make and were definitely crispy on the outside and chewy on the inside. i was a little disappointed that they weren't as sweet as i thought they would be. i'm not sure if i should add more sugar, or add less flour. but it would've been perfect if they were just a little sweeter...

White Chocolate Macadamia Nut Cookies IV

I followed the recipe exactly the way it said, except for that I got a little greedy and put 12 scoops on a medium cookies sheet and that smooshed everything. The next round, I only put 6 on the sheet and they still turned out pretty flat. They didn't look like the picture. But after all that, they tasted good. They were crunchy on the outside and soft on the inside. It sucks that the presentation wasn't nicer because I'm making these for someone else.

Meatball Spaghetti Sauce

I thought the recipe was ok. I only used the meatball part. Like a previous reviewer suggested, I baked them for about 25 minutes at 350 and then rinsed them. The bottoms of the meatballs were burnt, but that's ok, it didn't really affect the taste of the meatballs. I only used 1 1/2 onions and after mixing it all up, it was way too much. Also, I added a teaspoon of oregano instead of parsley for more flavor. At the end of it all, I thought it tasted like the italian bread crumbs I had put in. The meatballs were kind of soggy and not very meaty. Tasty, but still soggy. I simmered them for 25 minutes and they were still not too meaty tasting. My boyfriend liked it, but he's not the one who does the cooking =P so I'm going to continue searching for that perfect meatball recipe.
