Vegetarian Chickpea Curry with Turnips

I am trying to limit the canned food used in my cooking and this recipe calls for a lot of canned food. The dish turned out all right, but next time I might avoid using canned tomato sauce and corns.

Cream of Jerusalem Artichoke Soup

This is absolutely delicious. I omitted brandy and only used whole milk, instead of heavy cream. Some review mentioned that the taste a little bit bland, which I disagree. I really enjoy the hearty and subtle taste of Jerusalem Artichoke.

Brazilian Fish Stew

I didn't have coconut milk at home. Instead, I added some yogurt right the end. It was amazing. The yogurt was so good that I'm not sure I would use coconut milk next time.

Simple Whole Wheat Bread

The best recipe I have ever tried. I have been trying different whole wheat bread recipes on this website and most of them have difficulties rising. I asked couple of friends and one mentioned that it might be the organic flour I was using, since organic flour is more difficult to rise. Anyway, I tried this one and it is delicious and fluffy. I plan to increase the whole wheat flour portion gradually. Hopefully, the bread will still rise.

Yogurt Salad Dressing

I did not have any herbs in the fridge, but really had a craving for a hearty salad with yogurt dressing. I decided to give this recipe a try, and omitted the herbs. It turned out delicious! I have used this dressing in BBQ beef salad (spinach with BBQ beef) and Grilled Asparagus Salad. This dressing complemented both salads. It is healthy, creamy and extremely fulfilling.

Zucchini Risotto

I did not have sun dried tomato, but I added a TBS of lemon juice. It turned out delicious. The lemon juice really brought out the taste of zucchini. I used Parmesan cheese and also added a little bit of white wine.

Beet Soup

What a tasty and healthy recipe! I used homemade chicken stock, instead of beef stock. I also substituted cream with plain yogurt, which turned out to be a great complement to the sweet beet. I tried to slice the beets really thin, but still needed to cook the soup for 40 minutes. You do have to make sure to use a good blender / food processor for this recipe, as the beets might still be a little hard even when cooked through. Considering the ingredients I put in, this is definitely a very healthy delicious recipe. Bravo!

Ricotta Gnocchi

This is a great starter recipe for Gnocchi. Extremely easy to make. When you mix all the ingredients in for the gnocchi dough, you might find the dough too wet and hard to handle. There is no need to add too much flour. When the dough is rolled on the floured surface, the dough will become be much easier to handle. The gnocchi turned out pretty good. It is slightly bland for me, but my husband loved it. The pasta sauce is a basic pasta sauce. For someone who is looking for a more refined taste, you might want to use your own pasta sauce. Overall, a great recipe for someone looking for a simple and quick homemade gnocchi.

Fettuccine with Sweet Pepper-Cayenne Sauce

Red pepper with Cayenne! A great combination. Instead of sour cream, I used natural yogurt, which turned out great. I also added some onions. I probably added twice amount of the cayenne pepper, because I just love cayenne pepper. The great thing about this dish is that it is very simple to make. You mostly likely have all the ingredients at home already. It could be slight bland for some people, but after the first time, I plan to customize it in the future. Maybe some tomatoes...

Miso Salmon

I did not have sake, nor the salad dressing. I simply omitted these two ingredients. Based on the review, I also reduce the water, to make sure that the sauce is not too watery. I also did not poach the fish in advance, because salmon usually cooks very fast in the oven. The taste is awesome. It gives a perfect balance. I love this recipe and would definitely make it again.

Paella

I did not put any shrimp, because my husband is allergic to shrimp. I thought there was more sausage than needed. I added some eggplant, simply because I had lots in the fridge. Turned out that the eggplant absorbed the juice of the broth and the sausage and it tastes great. Overall, fantastic recipe.
