Crustless Spinach Quiche

A great 'starter' recipe. I changed the spinach to broccoli - about 2 cups or more (lightly steamed and chopped to get some of the moisture content out). I've also added a 6th egg - changed the cheese to Pepper Jack and a small handful of fresh Parmesean. Added 1 or 2 cloves of minced garlic, crumbled bacon bits, a small amount of chopped turkey deli meat (less fat than ham - but ham is good too), a tbsp or so of cream cheese (melted first), and I sauteed the onion with some fresh mushrooms too - I used 'baby bellas'. You have to put the pie plate on a cookie sheet - it might bubble up a bit and keeps the oven cleaner. I also increased the cook time by 5 min due to the added amount of items and the extra egg.
