Hearty Vegetable Lasagna

Every summer we start to crave this. Once the zucchini and peppers in the garden are ready, it's lasagna time! We LOVE this recipe. I add a generous helping of zucchini and sometimes yellow squash cut in thin circles, then quartered. I also add more mozzarella to the ricotta mix and while layering sprinkle more mozzarella after the parmesan. I don't want a huge thick layer of cheese on top. Just a sprinkle. Make sure to pick a spaghetti sauce you like by itself- no Hunts stuff or that would ruin it.

Mom's Zucchini Bread

Scarfed up almost immediately by all five kids and hubby. I left out the nuts- we are not fans. It has a sugary, crunchy type crust that is fabulous. Just love it.

Salsafied Chicken and Rice

Everyone loved it. I made it with instant once because I had a box given to me. I decided I just hate instant rice. I now precook rice (just in one of the cheap microwave cookers) while I cut and cook the chicken and such, and then throw the regular rice in at the end after the soup and salsa are boiling. I also throw in a bunch of cheese into it then and stir it up so it melts throughout. It's just as quick and much better. Good comfort food.

French Beef Stew

Love it! I use V8 for the tomato juice and throw in a beef bullion cube. I cannot imagine someone calling this bland.

Slow Cooker Taco Soup

Pumpkin Bars

I personally love these being "cake-like". My kids just call it pumpkin cake. We all love it! I add a touch of nutmeg and cloves and add more cream cheese than called for (are there really any 3 oz. packages of cream cheese?). Delicious!

Yes! I had tried homemade before and it seems like I just had to keep adding more cubes to make it taste like anything. This is so amazingly good. Did not add rice, but egg noodles. Thank you!

The Best Bean and Ham Soup

I have never been a fan of the old ham and beans soups, but hubby requested it. This was great! I just kept sampling it. We have a young family, but had it polished off in a couple days-none left to freeze!

Seven Layer Gelatin Salad

Awesome! I made this for my little girl's birthday party. I made it into individual servings in clear plastic cups and they looked amazing. Went with the rainbow colors mostly- grape, blue, lime,orange, apricot, strawberry, cherry. I did not use evaporated milk and just subbed the water with vanilla ice cream on every other layer-soo yummy! The kids were amazed when I brought them out and thought they were soo good!

Orange Cream Fruit Salad

I crave this stuff and make it for many family gatherings. Here are my changes: Lessen the milk, no apples or bananas, add chopped strawberries, cut the sliced peaches into more like thick chunks, and sub cool whip (i use fat free) for the sour cream. I also often add a little more o.j. for more orange flavor. Yummy! I have had many recipe requests from family and friends!

Luscious Buttercream Frosting

Lemon Poppy Seed Bundt Cake

My young kids cannot get enough of this. My little family of four eats this easily in one day. Changes: I substitute applesauce for the oil and egg whites for 2 of the eggs. Definitely add lemon pudding instead of vanilla. Then I generously glaze it with lemon juice/ powdered sugar mix. I also never have time to soak the seeds for very long at all, but still add the milk. Soooo good.

Awesome Slow Cooker Pot Roast

I didn't have quite enough time to let it cook for the 8 hours, so I did 3 high and 2 low. It was very tasty, and the vegetables I added were outstanding. After eating, we let it keep cooking on low for a few more hours and WOW was it good. The meat just fell apart. The full hours on low is definitely recommeded. Also, just add a little cornstarch to the gravy in a saucepan if you want a thicker gravy. Soo good.

Blueberry Zucchini Bread

I have zucchini coming out of my ears, so I came across this bread in my quest to make every possible recipe out of the stuff. I'm glad I did and so is my entire extended family and neighborhood! I put it in two regular loaf pans and add more berries than called for. Yummmmm!

Pineapple Zucchini Bread

The smell alone is to die for! I glazed half, just to see which one is best. It did not seem to matter to anyone else which was which, because it was all devoured immediately. It is a bit difficult to cut, crumbly, but fabulous to eat!

My Favorite Soup

Yummmmmmm! This is unbelievable! I needed to double it, but forgot to add more cream o' potato. It was so good, I'm almost afraid to try it the other way. It is fabulous in bread bowls!

Apple Crisp II

This is the best apple crisp recipe ever! I've never had a problem with sweetness because I always use Granny Smiths and it always comes out perfect! I've never altered anything, well, except I really don't measure out exactly how many apples I put in, I add a bit of nutmeg for smell, and I do cook it in a 8x8 pan because I prefer it to be thicker. Other than that, it is definitely NOT dry and is not runny either. Wonderful!

Granny's Banana Bread

We love this! I love that it is lower in fat and still tastes killer. I don't understand all the other banana bread recipies w/o cinnamon or nutmeg. I have also used canned pumpkin in place of applesauce and we think it tastes even better! We have never tried it with the optional ingredients, though. Works great as muffins too.
