Lime Chicken Soft Tacos
This was good, and will probably go into the rotation, but it is not without flaws. Just reading the recipe I figured it would be bland, so I upped all of the seasonings by about a half tsp to one full tsp. I also added about 1 tsp each of cayenne and cumin and 1/2 tsp of corn starch. I mixed all of the dry seasonings together (so the cornstarch wouldn't clump up)and also probably tripled the garlic, which I pressed instead of minced. For the liquids, I ended up using the juice of 2 limes and at least 1/4 cup of vinegar. With these changes, it was a flavorful meal and was well liked by the entire family.

Jewish Apple Cake II
This recipe is a good reference, but I ALWAYS up the apples. I typically use at least 10, and I use various types. I make very thin layers of batter, and dense layers of apples. I end up having 3 layers of both. This cake is usually better the day after it's made, but if it sits too long (it usually doesn't make it in our house) it starts to taste funky.

Breaded Chicken Fingers
These are soooo good. Most other chicken fingers I've made were lack-luster, but these were fabulous. Even though I made some alterations, I still give the original recipe 5 stars. Instead of using garlic powder, I put 3 cloves of garlic through a press. I also put hot sauce in the buttermilk mixture. I served these with a honey mustard recipe from this site that consisted of 1/3 cup mayo, 3 tbsp honey, and 2 tbsp yellow mustard. These may not be the healiest thing you can eat, but they sure do hit the spot!!
