Chicken, Avocado and Mango Salad

This salad was fabulous. We could have made half the dressing as we only drizzled a couple tablespoons on each person's salad and that was perfect! Loved the flavor combinations! My daughter asked for it again yesterday and today. A keeper!

Raspberry and Almond Shortbread Thumbprints

Fabulous cookies! I made them for the first time when I was hosting Christmas at my house. I made 7 different kinds of cookies and these were by far the most popular! I followed the recipe exactly except added 1/2 vanilla and 1/2 almond flavoring to the glaze. Wonderful! Today I am going to make them with lime juice in the dough and lime curd in place of the preserves.

Simple Baked Apples

Made this in the slow cooker to serve with thick-cut pork chops on the grill. Wonderful. Very mellow, comforting dish. Easy and delicious. I made it exactly as written but omitted the nuts (kids won't eat them). Loved it! Thank you for a wonderful recipe that I will make often.

Wow! Fabulous! Everyone loves these. A bit time-consuming to make, but well-worth the effort. Serve with warm corn bread. Delicious!

Unbelievable Chicken

Made this marinade as written. Delicious. I made a quadruple batch and marinaded 6 chicken breasts (cut into bite-sized pieces) for almost 24 hours in approx 1/4 of the marinade (equivalent to this recipe, as written) and approx a dozen large shrimp for 15 min. Refrigerated the reserved 3/4 of the marinade. The next night we grilled the chicken, shrimp, and added pineapple chunks, onions, and red peppers. Served with rice. Heated the reserved half of the marinade and served individually for each person to use as dip or to pour over meat, veggies and rice. Everyone loved it! Definitely 5 stars. Will make again and again! Have made this recipe numerous times. Most recently started marinating bone-in, skin-on chicken breasts before grilling. Everyone raves about them. Very moist and juicy plus a wonderful flavor! Can't say enough good about this recipe!!!

Irish Soda Bread in a Skillet

We all loved it. I make homemade yeast bread a couple times a week, always changing the variety. We had never had Irish Soda bread before, so I found it to be a cross between a yeast bread and a biscuit. I made a big pot of spicy chili for dinner and forgot that we were out of bread. I searched for a recipe that I could make in under an hour and found this quick and easy Irish Soda bread. It was quite flavorless on its own, which is good as everyone in the house likes to put something different on as a topping (peanut butter, fruit preserves, butter, honey, etc.). My husband requested it again in the morning for breakfast ... and because it's so quick and easy, it was no problem. Thanks for a great recipe! I will definitely be making this often! I think I will also experiment with spices and sweeteners for something different. We love it!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Oh. My. Goodness! These cupcakes are fabulous. My 16 yr old daughter even talked about them to her friends at school. We had three of the guys in her class over to help with yard work and when the cupcakes came out, they said, "We heard about these!", and proceeded to eat the remaining 15 cupcakes over the course of the afternoon. The cupcakes are now everyone's favorites! Thank you for a winner, lovestohost! The only change I will make for future batches is to make egg-less cookie dough so they won't have to be refrigerated.

Chuck's Favorite Mac and Cheese

This has become our very favorite Mac and cheese recipe! I make it as written (although sometimes my fresh grated Parmesan is actually Parmesan, Romano, Asiago blend). My daughter's boyfriend also loves it and, I think, could eat the entire pan himself. Not sure how it tastes the next day because we've never had any leftovers. Thank you for a wonderful, comforting, delicious side dish. Four thumbs up from this family of cheeseheads! MMMMmmmmm.
