Lentil and Cactus Soup *Moms Recipe*

Interesting soup! I was looking for some recipes that call for cactus since I tried some at a local restaurant in a molcajete dish. The recipe didn't say when to add the cactus, so I added it with the sofrito. I also added more cumin, pepper, and a couple packets of Sazon seasoning. I used 2 cups canned San Marcos' brand cactus strips. The flavor and saltiness of the bouillon cubes gets absorbed so additional salt was needed for our tastes. I added 1 tsp Chicken flavored Better Than Bouillon to boost the chicken essence and the saltiness. Good basic recipe to spice according to your own tastes. Thanks for sharing.

Irish Soda Farls

Awesome biscuit-like patties good with butter and jam or just plain. I added some whole wheat flour for added nutrition and to make the dough firmer. Add enough to make dough easy to form into biscuit patties and cook on dry griddle over low heat so they do not burn before cooking through. Cover pan after turning to help them cook evenly. Quick and simple to make.

Hearty Italian Lentil Soup

Slow Cooker Carnitas

Awesome recipe! I was looking for a pork recipe like they serve in a local restaurant. If you shred the pork and sauté it in oil or better yet lard, it gets crispy around the edges. This makes it awesome to eat plain topped with cheese or as a taco filling with toppings. Would make great enchiladas or tamales also.

Fresh Pear Pie

I admit I did not make this as shown, but will rate it high because my pear pie recipe is so good. Since this one sounds so much like "apple pie" and pears are usually bland, I switch things up by omitting the cinnamon, using orange peel instead of lemon and adding 1/4 c raisins and 2 T. chopped walnuts. (My recipe also calls for 3 T. instant tapioca instead of flour). When pie is cooled to luke warm, glaze with a thin powdered sugar, orange juice & orange peel glaze. Fabulous!

Quick Eggplant Parmesan

I didn't know I liked eggplant until I tried this recipe! Quick to fix and very tasty for a side dish or meatless main dish. I dipped the eggplant in flour before the egg wash and patted it firmly into the crumb mixture (I used half seasoned bread crumbs and half Panko to total 1-1/2 cups). I had to add a little more water to stretch the egg wash. I also used more sauce because we like it that way. Thank you for sharing this wonderful dish!

Mediterranean Greek Salad

A great change of pace salad. Can also use fresh tomatoes and drizzle a little EVO over all. Season with cracked pepper and sea salt. I used less feta but it was still delicious.

Tangy Sweet Potato Fries

Good recipe!!! Instead of wedges, I cut them into 1/4 inch thick slices and cooked them on a veggie screen on the grill at 375 degrees for 15 min. then turned and continued cooking another 5 minutes. The seasoning is just right and even folks who don't think they like sweet potatoes will eat these!

Cream Cheesy Cubed Zucchini with Lemon and Oregano

I knew this was a hit when my zucchini-hating husband asked for seconds! I did add some minced garlic and a tsp of lemon juice for extra zing because I used dried lemon peel on hand. Great way to utilize zucchini! Thank you for sharing it.
