Slow-Cooker Tex-Mex Chicken

I added an entire package of low sodium taco seasoning. I'm not sure if this is more/less than the 2T that is called for. I thought it came out great and my husband and I enjoyed it. I usually don't like the taste of chicken in a crock pot...sort of has a metallic type flavor to it...but not with this recipe, it was delish!

World's Best Lasagna

This is a very, very good recipe. Only changes I made was to use my homemade marinara in place of the tomatoes, paste, sauce and seasonings for them. Next time I will double the ricotta.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Very, very good. I used Kissables instead of chocolate chips and they bled a little. Next time I'll do the cchips. I topped them with chocolate butter creme frosting. Yum!

Rebecca's Rockin' Vodka Lemonade

Why, oh why didn't I make more of this???? I had a Girl's Night Out Party so I tripled the recipe and served it in a punch bowl. I couldn't find raspberry lemonade so I used pink. I added fresh raspberries as well. It was gone in an hour!

Baked Ziti I

This was very good. However, I didn't use jarred sauce. I just can't do it. I made sauce ahead of time and used that. I also mixed the ziti in with the sauce, reserving a cup or so of sauce to place on the top.

Deeelish! The only change I made was to add the butter to the potatoes while I was mashing. I will definitely make this again next year for St. Patty's!! It made a nice side to the corned beef and cabbage!

Brownie Caramel Cheesecake

This tasted delicious but I ended up with a major crack in my cheesecake. I was able to cover it up nicely with the hot fudge and caramel! :) Considering this was my first cheesecake, I was quite proud of myself. I followed the recipe exactly but next time I will add chocolate chips to the brownie mix and cook it for less than the time stated in the recipe. I will also use a water bath. It stuck a bit while trying to take off the springform so next time I won't spread the caramel to the edges.

Rich Chocolate Frosting

Fabulous!! I cut the recipe in half and it was more than enough to frost a two layer 8 inch cake and some leftover for the kiddos to lick off the spoon :)

Mini Cheesecakes I

These always disappear quickly at my house! I don't use half as many wafers as listed in the recipe and still have leftovers. Also, instead I top each cheesecake with fresh sliced strawberries or blueberries.

Chocolate Chip Coffee Cake

Out of this world!! The only change that I made was that I eliminated the nuts (due to a food allergy) and doubled the chocolate chips. The kids, dh, and grandma gobbled it up! Thanks!

Swedish Meatballs

How much evaporated milk is supposed to go into the meatballs??? It says 1 2/3 cups for the meatballs and then 1 cup for the sauce in the ingredients but in the instructions calls for only 2/3 c for the meat mixture. I went with the 2/3 c and still it seemed like too much. Many of the meatballs fell apart while I was browning them. One substitution that I made: I used 1/8 teaspoon each of nutmeg, cinnamon, cloves and pepper in place of 1/2 teaspoon of allspice since I didn't have it on hand. Overall the taste was okay. We served them over buttered egg noodles. I was very disappointed about the appearance since I had meat "clumps" rather than meatballs!

Bacon and Tomato Cups

I used 2 7.5 oz packages of small dinner rolls. I cut them each in half horizontally and made 24 cups, with 6 dinner rolls left over. I baked them for about 13 minutes but should have left them in another couple of minutes. I would have prefered them with more of a well-done, almost crispy texture. I also think that cheddar cheese would have been better.

Buffalo Chicken Dip

I used cooked chicken breast and ranch dressing as variations. I can only give this recipe 3 stars. It didn't really go. Perhaps it was the crowd ~ my kids didn't like it and all but one grandparent thought it was too spicy. My husband thought it was "too creamy". I thought it was just okay. If I make it again, I'd surely cut the recipe in half as there was way too much.

Best Spinach Dip Ever

I made this as a Christmas dinner appetizer. I put it in a round loaf of pumpernickel bread. The mayo taste was a bit overwhelming for me so next time I might add more sour cream and less mayo. Also, some parm cheese might be a nice added kick.

Penne and Vodka Sauce

I have used this recipe many times and it is always devoured by everyone. I triple the sauce for two pounds of pasta. I also only use about a third of a pound of pancetta and use homemade sauce that I make the day before. Excellent!
