Chuck's Favorite Mac and Cheese

Perfect when made with whole grain pasta and some low fat ingredients (but never substitute for real butter). In summer, if you don't want to use the oven, use a Crockpot or slow cooker to 'bake' it. Then sprinkle on the bread crumb mixture as you serve. Great with green beans.

Easy Cajun Jambalaya

Tasty. Definitely worth making again. Not overly spicy. I made with brown rice. Next time I will add more green pepper, more chicken broth, and some shrimp.

Alyson's Broccoli Salad

Very popular side dish at family gatherings. I made with Crasins instead of raisins for Christmas, and using red wine vinegar instead of white because I had the red on hand. Many people asked for the recipe. You do need to use your own judgement as to the proportions of dressing and broccoli. I did not put all of the dressing in. Try working in some, tasting, and stopping when it tastes good to you.

Cream Cheese Kolacky

Excellent flavor dough. I had a hard time mastering the cutting and filling process so that they did not ooze preserves or pop open in the oven. However, the pastry part is so good that I will definitely keep trying.

Award Winning Soft Chocolate Chip Cookies

Very tasty soft chocolate chip cookie. My son thought it a bit too chocolaty, so I will try a few less chips if I make it again. I liked how soft they turned out, but they did not stay as soft in my sealed storage container. One comment was "nothing special," so I think I'll try another recipe next time.

Sugar Coated Pecans

I make this every year at the holidays and everyone loves it. I cannot seem to make enough batches to keep up with the demand. Very easy recipe to pull together. Just have to be around to stir every 15 minutes while baking. A wonderful treat.

Microwave Oven Peanut Brittle

Exceptionally easy and exceptionally good, and I don't even like peanuts. Three pieces of advice: (1) Use a big bowl. This can really foam up. (2) Don't be tempted to interrupt the microwave early to stir. (3) Once you add the baking soda, just stir rapidly and pour right away. This can harden quickly. I am going to try cashews next. This is a very easy and tasty recipe.

Deb's Scallops Florentine

Absolutely wonderful. Unlike some reviewers, I did precook the scallops. I varied from the recipe in two ways: (1) Since some reviewers criticized the recipe for having too much mozzarella cheese, I used a Kraft shredded mix of mozzarella with other Italian cheeses instead. (2) Could not find Old Bay, so used Paul P's seafood seasoning instead. Will definitely make again.

Chicken and Broccoli Braid

We use Miracle Whip instead of mayo. It seemed a little too strong on that flavor. Overall good, though. We will try it again with less mayo/Miracle Whip.
