I made this for a family which have various members disliking chocolate, banana, mango, durian, raisins, pineapples and such, resulting in extremely limited cake choices during birthdays. Followed the recipe except for a few changes due to lack of ingredients: used all brown sugar (no white at home), omitted cinnamon and used almonds instead of pecans (can't find them in the store), and used self-raising flour instead of plain flour, baking soda, baking powder and salt (cos that's what's left at home) Halved the recipe and made an 8-inch round cake plus 2 cupcakes for trying. The cupcakes turned out perfect, but I overbaked the main cake so that was a little dry - no fault to the recipe, it was the chef... Everyone raved about the frosting. This recipe is definitely a keeper for my troublesome family!
