Salted Caramel Sauce

Amazing! I've made this many times now and I don't wait around for it to turn a darker shade of amber. That's because the first time I tried, I waited. And the sugar continued cooking after I removed it from heat and I got bitter caramel with the 30 seconds waiting. Usually by the time my sugar melts completely in my pan, it's a light amber. I kill the heat and grab the butter, and that 30 seconds seems enough to get it to the right state of caramelization. I guess different pans behave differently so watch the color carefully.

Pastry Cream

First time making home made custard. Omg, it was sooo good. I made it using 4-5 egg yolks, no whole egg. Great way to use up egg yolks after making macarons. Used this to fill custard puffs. Ate the leftovers as it is. =D

Gold Cake

I had 11 egg yolks leftover from making macaron shells and Swiss meringue buttercream, and decided to try this recipe for a birthday cake for our helper. My 11 egg yolks only came up to slightly pass 1/2 cup but I decided to go ahead anyway after reading some of the reviews. I beat the butter with sugar until pale and fluffy, and used a mixture of all-purpose and cake flour becos I was out of AP flour. The cake turned out soft and fluffy, and carried the chocolate ganache I poured over it proudly. Great way to use up egg yolks from my frequent macaron baking!

Orange Cream Frosting

I made this as a frosting for Chocolate Cake II from this website, trying to create a festive Chinese New Year feel. I quadrupled the recipe and used only 2 cups of sugar. It was already plenty sweet, and frosted almost 90 mini cupcakes. I did follow some reviewer's advice and added in the zest of an orange (I forgot I needed to quadruple the recipe when I zested the orange, and had no time to zest more later on). Instead of corn syrup, I used the sugar syrup I had leftover from candying orange slices for a topper. That helped to add the orange flavor to the frosting. I skipped the coloring and simply topped the cupcake with a quarter slice candied orange. It was a huge hit at the party I brought it to!

Carrot Cake III

I made this for a family which have various members disliking chocolate, banana, mango, durian, raisins, pineapples and such, resulting in extremely limited cake choices during birthdays. Followed the recipe except for a few changes due to lack of ingredients: used all brown sugar (no white at home), omitted cinnamon and used almonds instead of pecans (can't find them in the store), and used self-raising flour instead of plain flour, baking soda, baking powder and salt (cos that's what's left at home) Halved the recipe and made an 8-inch round cake plus 2 cupcakes for trying. The cupcakes turned out perfect, but I overbaked the main cake so that was a little dry - no fault to the recipe, it was the chef... Everyone raved about the frosting. This recipe is definitely a keeper for my troublesome family!

Chocolate Sour Cream Cookies

i made 2 recipes and ended up with about 200 mini cookies for a pot-luck session. After reading other reviews about the difficult batter, i dumped the batter into a piping bag and piped teaspoon sized cookies onto the baking sheet... this method works well and i finished the whole lot pretty fast. Gave it four stars cos i personally prefer crispier cookies, which can be achieved with increased baking time (i forgot about the last batch in the oven, it was perfect by the time i remember).

Double Tomato Bruschetta

I come from a typical Chinese family in sunny Singapore where balsamic vinegar is unheard of. After reading the reviews, I decided to invest in a bottle, and boy, I sure didn't regret it! Though I meant to reduce the amount after reading some reviews, I accidentally tipped too much of it, yet it turned out ok. I also couldn't find sun-dried tomatoes, so i used more normal ones. My boyfren, who's a tomato lover, couldn't get enough of it. When I told him he had betta help me finish up the entire bottle of vinegar, it was obvious he was more than happy to!

Quick and Easy Alfredo Sauce

I made this for my vegetarian boyfriend. Couldn't find vegetarian parmesan (most cheeses contain animal-derived rennet), so i used a little mozzarella instead. maybe mozzarella wasn't flavourful enough to cover the taste of the cream cheese... I found it too strong for my liking in an alfredo sauce. Will try it again with parmesan next time...

Pasta Lasagna

I substituted the beef with chicken as there were buddhists among those I cooked for, and I used tofu instead of ricotta because I couldn't find ricotta in the supermarket I went to. Although I didn't follow the recipe amounts closely and ended up cooking too much for 3, we finished every single morsel of it! Definitely a keeper!!
