About this Cook
I enjoy cooking. I love to try new dishes and always enjoy putting a new twist on an old favorite and making recipes healthier.
My favorite things to cook
My Italian ancestry and living with two great cooks, my mother and grandmother, has given me a knowledge of Italian cooking. Many of the recipes I grew up with have been modified to lower fat versions.
My favorite family cooking traditions
I enjoy cooking for the holidays and making the traditional recipes that I grew up with.
My cooking triumphs
Cooking has brought my daughter and I closer together. We work together to prepare both simple meals and traditional holiday feasts and to make gourmet chocolates.
My cooking tragedies
My worse tragedy happened when friends stopped in as I was heating up oil for Chinese egg rolls. While I was chatting with my guests, the smoke alarm went off and the flames in my pan were about a foot high.

Ham and Asparagus Fettuccine
I did not have any heavy cream, so I used a jar of Alfredo sauce with Parmesan cheese -- left out the butter and used only 1/4 cup Parmesan cheese. My family really loved it and we saved over 300 calories per serving. The sauce and cheese were not heated, so I warmed it in the oven for about 15 minutes.

Pumpkin Black Bean Soup
My whole family loved it. Didn't have sherry vinegar, but used marsala cooking wine.

Unstuffed Tomatoes
This is quick and easy and can be made with tomatoes that are blemished. Try cooking it in a preheated cast iron pan, stirring often. We've never had a problem with soggy bread.
