Neapolitan Cookies I

Reviewed: Jan. 1, 2015
These cookies were really cute! I left out the nuts I was pressed for time and I only left mine in the fridge for one instead of four hours and they were fine.

Pumpkin Casserole/Souffle

Reviewed: Jan. 1, 2015
I wanted to try something new and made this as a side dish for christmas dinner. It was really good! More like a dessert tho. Tasted alot like a pumpkin pie but with a fluffier texture and without the hassle of a crust. I really liked this and probably could have ate the whole dish myself!

Cranberry Sauce Extraordinaire

Reviewed: Nov. 29, 2014
This cranberry sauce was amazingly good. I left out the pear and substituted a small can or mandarin oranges in place of a fresh orange. I will be making this again.

Schlotsky's Bread

Reviewed: Nov. 15, 2014
This is a really good bread recipe for sandwiches. It is not exactly like Shlotsky's bread but still pretty close to it. I made this bread to make muffeletta sandwiches with and they were fantastic!

Double Fudge Brownie Cookies

Reviewed: Nov. 3, 2014
Using a box mix makes this quick and easy to make. I divided the batter in half and added white chocolate chips to half and peanut butter chips to the other half. My sons and their friends ate these up quickly. They liked both kinds but preferred the ones with the peanut butter chips.

Baked Apple Crisp

Reviewed: Nov. 3, 2014
I had high hopes for this recipe but it just did not come out right. I am not sure what went wrong. I had never made a crisp topping that had evaporated milk and powdered milk in it. It was very moist as I was adding it to the top but after baking it had a hard and chewy texture. Adding the applesauce to the bottom layer really brought out the apple flavor but it also made it a little runny. In the future I would cut back on the applesauce and use a traditional topping that used butter instead of milk.

Apple Turnovers

Reviewed: Oct. 25, 2014
These came out great. The crust is very flaky. I cut the recipe in half and just made 4. I didn't bother with soaking the apples first and I also served them plain without the glaze. They were still plenty sweet without the glaze.

This was fantastic. My store did not have swiss chard so I used fresh baby spinach in place of this and it was great. The little parmesan crisps were a nice added touch!

Baked Smoked Sausage Spaghetti Casserole

This was a nice hearty comfort food meal that my family enjoyed. I did have to open a jar of spaghetti sauce to add to this to make it thicker but we thought the smokey flavor from the sausage was great!

Sunny Pepper Parmesan Rice with Spinach

Reviewed: Sep. 17, 2014
This recipe make a very attractive side dish with all the different colored peppers and spinach. Tasted good too! I made a few changes to this. I am not a fan of vinaigrette so i just drizzled a little olive oil over the top. I also reduced the amount of salt since hubby has to limit that. I really liked this.

Sticky Sweet and Sour Chicken

Reviewed: Sep. 11, 2014
The Russian salad dressing in this recipe really gave the chicken a brilliant shade of orange. Plus I used peach preserves in place of apricot and that must have added to the orangy color. It had the appearance of being very spicy but really this has a very sweet flavor. Nothing spicy or sour at all. I cut the chicken into bite size pieced before baking it and reduced the cooking time. I added a little corn starch to the sauce when it came out of the oven to thicken it up and served over rice.
