Black Bean and Couscous Salad

This recipe is fantastic!!! Even my husband likes it and that is saying a LOT! The only thing I changed was not using cilantro and I didn't miss it at all. I will definitley make again.

Charleston Breakfast Casserole

Ok, here goes. I love, love, love this, however, my family is trying to eat healthier so I made some changes. First I omitted the butter entirely and used 1 egg plus 1 1/2 cups Egg Beaters. I used half regular cheese and half fat free cheese, fat free croutons and 1/2 C lower sodium, real bacon bits. I prepared it the night before and cooked for about an hour in a 9x13 pan and did not adjust the milk at all. It turned out wonderful (not soggy) and this altered version is so much healthier. I got 8 servings and froze some so I coukd just pull them out of the freezer and reheat in the microwave for a midweek breakfast. They reheated wonderfully in the microwave. Thank you so much!

Meatball Sandwich

I used 2 lbs. of beef and made 40 meatballs. I was only looking for a meatball recipe so I did not make sandwiches out of these. The meatballs were very good though.

French Bread

Mexican Whole Wheat Flour Tortillas

I substituted olive oil and used all white flour and they were delicious! I also used the tips from others about using boiling water and be sure to let the dough rest before rolling them out. Thanks everyone.

Cheesecake Bars

I made these in a 11x7 pan and I cut them into 24 servings. They were small peices and thin but that made them easier to eat like a bar cookie rather than a piece of cheesecake. In that regard, this was exactly what I was looking for. I also made a blueberry topping to go with and they were fantastic.

Goulash Supreme

Very good. After reading some reviews about pasta troubles I took everyone's advice and cooked the pasta separately and added it at the end. I also added a couple splashes of Worchestershire and doubled the garlic. Hubby and I loved it but the kids wouldn't touch it.

Chive and Onion Yogurt and Cream Cheese Spread

YUM!!! This was so light and creamy and not overpowering with onion. I really hate to rate a recipe that I have made many changes to, but I didn't have chives and when I looked for my onion powder I realized I was out. I substituted 1/2 tsp. Adobo seasoning and didn't bother getting chives and it was a HUGE hit at our BBQ yesterday. I served it with Triscuits and many people asked for the recipe.

No-Bake Granola Bars

These are fantastic. I have made them many times with different add-ins and they always turn out great (except when I used low-fat peanut butter). Today I made the 'sauce' and dipped apple in them to make diary-free carmel apples. My daughter is allergic to dairy and these came out better than I imagined!!!! I would give this recipe 10 stars if I could!

Easy Chocolate Mousse

While I am sure this did not taste exactly like "real" chocolate mousse, it was divine and I proudly seved it to guests last night for dinner. I added a little Bailey's and made a raspberry sauce to go with it. I served it in chilled wine glasses and it looked very impressive. Don't let the simple recipe for you, this doesn't have to be just for kids!

Easy Valentine Sandwich Cookies

This is my new favorite cookies recipe!! They were outstanding! I did not make them into sandwich cookies, but I did make them into heart cutouts and sprinkled them with colored sugar before baking. The recipe seemed to make a lot so I still have 1/3 of the dough in the freezer and will make shamrock cookies soon for St. Patrick's Day. Thanks so much!!

Italian Wedding Soup I

Very good soup! This is very similar to my recipe for Italian Wedding soup, but I like these meatballs better, although I did substitute ground turkey. To those who found it a little bland - do not pre-cook the meatballs. Let them cook in the boiling soup and then the spices will season the broth. I make my meatballs smaller using about 1 tsp. per meatball and I use acini de pepi pasta (tiny ball shape) instead of the orzo. Sometimes I just use ground pork sausage for the meatballs wehn I am in a hurry.

Chocolate Chip Cheese Ball

This was divine!!! I did not use the brown sugar at all because I read below that it gave a grainy texture and I used 2/3 C powdered sugar just to cut back on the sweetness a tad. Heaven, heaven, heaven. I really does taste like chocolate chip cheesecake!

Sourdough Bread I

I was so excited to try this recipe because it is a true sourdough recipe and does not require yeast. I am so happy that this turned out well. I was very nervous because this was my first bread from a homemade starter and while it did take a long time to rise, it was worth the wait. It took about 20 hours for the first rise and then about three for the second. My dough was very sticky as well - too sticky to knead - so I added a small amout of flour just so I could handle it and it turned out fine. Not to dense as I was worried it would be. Good sourdough is a true test of patience!
