Black Bean and Couscous Salad

This recipe is fantastic!!! Even my husband likes it and that is saying a LOT! The only thing I changed was not using cilantro and I didn't miss it at all. I will definitley make again.

No-Bake Granola Bars

These are fantastic. I have made them many times with different add-ins and they always turn out great (except when I used low-fat peanut butter). Today I made the 'sauce' and dipped apple in them to make diary-free carmel apples. My daughter is allergic to dairy and these came out better than I imagined!!!! I would give this recipe 10 stars if I could!

Kay's Shortbread

This was my first time making shortbread so the disappointing results may be my fault. I wasn't sure how to mix the butter in so I first tried to cut it in with a fork (kind of like a pie crust). Then I gave up and mixed it with my fingers and that worked fairly well. I doubled the recipe and pressed the dough into a rectangle and cut it into bars. I did get 35 bars that were about 1x3 inches and about 1/2 inch thick. I baked for 20 minutes and that was just enough. I did forget to add the white sugar to the top and I definitely missed it. This was only my first attempt so I will definitely try again sometime.

Bran Flax Muffins

These were pretty good but turned out a little dry for me. The batch made closer to 22 muffins rather than the 15 stated so I froze some and after they thawed I thought they were much moister and tasted better then fresh. I don't think I will make them often since my picky kids and husband would not eat them, however, I thought they were very yummy.

Easy Valentine Sandwich Cookies

This is my new favorite cookies recipe!! They were outstanding! I did not make them into sandwich cookies, but I did make them into heart cutouts and sprinkled them with colored sugar before baking. The recipe seemed to make a lot so I still have 1/3 of the dough in the freezer and will make shamrock cookies soon for St. Patrick's Day. Thanks so much!!

I used cauliflower instead of broccoli because we love it, but we still ended up throwing most of this out. I am sorry I wasted the ingredients on it and I sure I will not try this one again.

Luscious Chicken Pot Pie

This was very good, fast, and easy! I used one small bag of frozen mixed veggies, one can of cream of chicken soup and I also added about 1/2 cup shredded cheese. I cooked mine as directed and after 45 minutes the crust was still not done. I turned the temp up to 400 and cooked for another 15 minutes and it was perfect. It could use a little salt and pepper, but even so I still plan on making this often.

Greek Chicken Pasta

I did not read all the reviews before making this and now that I have, I am not suprised that mine turned out very dry. I did cut the amount of pasta in half and I am sure that helped some. I also was out of olive oil so used cooking spray instead and the feta was fat free. These changes might also account for some of the dryness. It was also a little bland so next time I will add kalamata olives. My husband thought this was good so I will try it again with a few modifications.

Beef Noodle Soup

Good marinade for pork. I did not used the onions and pepper and just cooked the pork chops whole rather than skewering them. I also cut way down on the oil and let it marinade for 24 hours and the meat had so much flavor. Will use this often since I usually have all the ingredients on hand.

Chocolate Chip Cheese Ball

This was divine!!! I did not use the brown sugar at all because I read below that it gave a grainy texture and I used 2/3 C powdered sugar just to cut back on the sweetness a tad. Heaven, heaven, heaven. I really does taste like chocolate chip cheesecake!

Mango-licious Tilapia

I have to admit that I don't like fish, but I keep trying. However, I was really looking forward to the salsa, so I was disappointed that I ended up throwing most of it away. It had too much avacado, WAY too much salt, and the mango got lost. My husband did love the tilapia and ate all four fillets, so I gave this recipe two stars anyway. This was also a lot of work with all the chopping and prep. And not an inexpensive dish either!

Mexican Whole Wheat Flour Tortillas

I substituted olive oil and used all white flour and they were delicious! I also used the tips from others about using boiling water and be sure to let the dough rest before rolling them out. Thanks everyone.

Cinnamon Streusel Orange Muffins

Sorry, I tried this twice because the first time I made some changes (plain yogurt instead of buttermilk and lemon instead of orange) and thought they were to blame. However, the second time I followed the recipe exactly and they were still not great. There was no detectable orange flavor and while the muffins were not 'bad', they were very plain and boring. I will be trying this one again.

Chive and Onion Yogurt and Cream Cheese Spread

YUM!!! This was so light and creamy and not overpowering with onion. I really hate to rate a recipe that I have made many changes to, but I didn't have chives and when I looked for my onion powder I realized I was out. I substituted 1/2 tsp. Adobo seasoning and didn't bother getting chives and it was a HUGE hit at our BBQ yesterday. I served it with Triscuits and many people asked for the recipe.

Easy Chocolate Mousse

While I am sure this did not taste exactly like "real" chocolate mousse, it was divine and I proudly seved it to guests last night for dinner. I added a little Bailey's and made a raspberry sauce to go with it. I served it in chilled wine glasses and it looked very impressive. Don't let the simple recipe for you, this doesn't have to be just for kids!
