Southwestern Egg Rolls

I served these with mexican rice and they were great for dinner. I have made them twice and the first time I used egg roll wrappers and they turned out just okay. The second time a used flour tortillas and they were much better. They also freeze well, too.

Cheese Soup III

Tasted okay, but very, very watery. I would add another potato to thicken it. I also ended up adding some sour cream after it was done to make it a bit more creamy. Very fast to make though.

Meatball Sandwich

I used 2 lbs. of beef and made 40 meatballs. I was only looking for a meatball recipe so I did not make sandwiches out of these. The meatballs were very good though.

Slow Cooker Scalloped Potatoes with Ham

I read the previous reviews and so I was skeptical about the amounts in this recipe. I decided to follow the recipe exactly (even weighed the potatoes on my kitchen scale) and indeed found it to be way off. Either the potatoes need to be halved or the rest need to be doubled. It was so dry and bland! I did cook this is the oven at 350 for almost two hours instead of the crock pot, but that would not have changed the taste. I gave this one star because it is edible, although not at all enjoyable. We did give it try, but then threw it all out and ordered take out.

Tangy Buttermilk Cheese Bread

This was not the best, but still pretty good. I made them into dinner rolls instead of a loaf. I will probably make them agin when I have buttermilk in the house and want to use it up.

Lap Salad

We thought this was a very bland. I loved the crunch of the almonds and noodles, but it needs to be doctored up a bit. It does make a lot though.

Skewered Grilled Potatoes

I didn't think these potatoes were anything special, however, everyone just loved them. I thought they were better the next morning when we fried them in a little butter and had them for breakfast. Salt and pepper is a must.

Easy Chocolate Mousse

While I am sure this did not taste exactly like "real" chocolate mousse, it was divine and I proudly seved it to guests last night for dinner. I added a little Bailey's and made a raspberry sauce to go with it. I served it in chilled wine glasses and it looked very impressive. Don't let the simple recipe for you, this doesn't have to be just for kids!

Chive and Onion Yogurt and Cream Cheese Spread

YUM!!! This was so light and creamy and not overpowering with onion. I really hate to rate a recipe that I have made many changes to, but I didn't have chives and when I looked for my onion powder I realized I was out. I substituted 1/2 tsp. Adobo seasoning and didn't bother getting chives and it was a HUGE hit at our BBQ yesterday. I served it with Triscuits and many people asked for the recipe.

Cinnamon Streusel Orange Muffins

Sorry, I tried this twice because the first time I made some changes (plain yogurt instead of buttermilk and lemon instead of orange) and thought they were to blame. However, the second time I followed the recipe exactly and they were still not great. There was no detectable orange flavor and while the muffins were not 'bad', they were very plain and boring. I will be trying this one again.

Mexican Whole Wheat Flour Tortillas

I substituted olive oil and used all white flour and they were delicious! I also used the tips from others about using boiling water and be sure to let the dough rest before rolling them out. Thanks everyone.
