Cheesecake Bars

I made these in a 11x7 pan and I cut them into 24 servings. They were small peices and thin but that made them easier to eat like a bar cookie rather than a piece of cheesecake. In that regard, this was exactly what I was looking for. I also made a blueberry topping to go with and they were fantastic.

Marshmallow Fondant

I had tons of trouble with this! It was terribly sticky and difficult to work with. I have melted marshmellow everywhere! LOL. And what was I suppoed to do with the buuter? Is the entire 1/4 C for my hands or was it supposed to be added to the melted marshmellows?

Saltine Toffee Cookies

I made these over the weekend and read the reviews afterwards. Apparently I did everything wrong according to the reviews but they still turned out great!! I subbed maragarine for the butter, used LIGHT brown sugar and walnuts instread of pecans. And I stirred the butter and sugar while it was boiling! LOL. Maybe I got lucky, but the end result was fantastic and they were gobbled up quickly. Mine were a tad sticky but I tossed them in ground almonds and that took care of it. I will try them again with real butter and dark brown sugar and see if there is a difference.

Apple Pie Muffins

I was so disappointed. I followed the recipe exactly and they were flat, greasy and no apple taste at all. I was also very surprised that there was no baking powder in these.

Refried Beans Without the Refry

There were fantastic although a tad salty for my taste. I was worried that there was too much liquid but once I had mashed the beans they were perfect. My big blunder was forgetting to wash the beans first! When I rinsed the rest of the beans from the same bag, they were filthy. I was so sad to have had to through my yummy refried beans out and start over.

Cranberry Nut Bars

I cut the butter to 2 Tbs. and added 3 Tbs. of applesauce and they came out great. I do agree that they are more of a coffee cake than a bar but they were still very yummy.

Sourdough Bread I

I was so excited to try this recipe because it is a true sourdough recipe and does not require yeast. I am so happy that this turned out well. I was very nervous because this was my first bread from a homemade starter and while it did take a long time to rise, it was worth the wait. It took about 20 hours for the first rise and then about three for the second. My dough was very sticky as well - too sticky to knead - so I added a small amout of flour just so I could handle it and it turned out fine. Not to dense as I was worried it would be. Good sourdough is a true test of patience!

Roasted Garlic Bread

Neither my husband nor I cared for this bread and the eight people at the dinner party I served it at said it was 'okay'. I had a lot left over that we didn't eat. I followed recipe to the letter.

Goulash Supreme

Very good. After reading some reviews about pasta troubles I took everyone's advice and cooked the pasta separately and added it at the end. I also added a couple splashes of Worchestershire and doubled the garlic. Hubby and I loved it but the kids wouldn't touch it.

Wonderful recipe! Thank you. Per other reviews, I only used 3 cups of sugar and it was just right. The recipe made enough to cover a 9x13 cake generously.

Italian Wedding Soup I

Very good soup! This is very similar to my recipe for Italian Wedding soup, but I like these meatballs better, although I did substitute ground turkey. To those who found it a little bland - do not pre-cook the meatballs. Let them cook in the boiling soup and then the spices will season the broth. I make my meatballs smaller using about 1 tsp. per meatball and I use acini de pepi pasta (tiny ball shape) instead of the orzo. Sometimes I just use ground pork sausage for the meatballs wehn I am in a hurry.

Baked Cheese Olives

I am giving this only one star because "as is", this recipe is impossible. It only works with modifications and if you don't read the reviews first, you won't know that they need doctoring. I did need to add water just to make the dough stick together and then I found them to be very salty and time consuming to prepare. Only one person at my Christmas party really said anything positive about them.

Charleston Breakfast Casserole

Ok, here goes. I love, love, love this, however, my family is trying to eat healthier so I made some changes. First I omitted the butter entirely and used 1 egg plus 1 1/2 cups Egg Beaters. I used half regular cheese and half fat free cheese, fat free croutons and 1/2 C lower sodium, real bacon bits. I prepared it the night before and cooked for about an hour in a 9x13 pan and did not adjust the milk at all. It turned out wonderful (not soggy) and this altered version is so much healthier. I got 8 servings and froze some so I coukd just pull them out of the freezer and reheat in the microwave for a midweek breakfast. They reheated wonderfully in the microwave. Thank you so much!

Swiss Potatoes Gratin

I wanted to like this so badly. It was very time consuming to make and the ingredients were rather pricey. I was also trying to overlook how unhealthy they are, but when we tasted them, it was not worth it at all. The ricotta was just wierd in there and there was not much flavor (and I even threw in extra seasoning based on other reviews). We did eat them with dinner but threw the rest away. Usually when I try a new recipe that I am very excited about and it does't turn out like I want, I 'tweak' it until it works. Not this one.

Southwestern Egg Rolls

I served these with mexican rice and they were great for dinner. I have made them twice and the first time I used egg roll wrappers and they turned out just okay. The second time a used flour tortillas and they were much better. They also freeze well, too.

Cheese Soup III

Tasted okay, but very, very watery. I would add another potato to thicken it. I also ended up adding some sour cream after it was done to make it a bit more creamy. Very fast to make though.
