Slow Cooker Pulled Pork
I was unable to find a reasonably sized pork roast as others have suggested so I followed the recipe and went with the pork tenderloin. I doubled the recipe and used 2 tenderloins (approx. 4 lbs.). I took the advice of many and added salt, pepper, and garlic salt to the pork before pouring the root beer in. I let the pork cook in the root beer for the suggested 6-7 hours before draining the root beer out of the crockpot. I then poured in the BBQ sauce (I used Dinosaur BBQ which had a nice spice to it) and then it cook for about two hours to soak up the BBQ taste. I did this because I felt the root beer taste was too strong initially. After cooking in the BBQ, the root beer taste went away and just made the pork a little sweeter. My hubby loved it on a hamburger bun with a side of baked beans! I topped a 1/2 cup of quinoa with this delish pulled pork for a healthier, fiber-filled, low-carb option and it was wonderful! This is a quick and easy recipe guaranteed to be a crowd pleaser!
