Parmesan and Basil Chicken Salad

I don't like fruit in my chicken salad, so this was perfect for me. I boiled the chicken breasts with onion, garlic, fresh rosemary, and basil. To cut down on calories, I used 1/2 C. light mayo and 1/2 plain yogurt. I loved the parmesan, but some people felt it was too overpowering. I will probably omit next time because I think it would be just as good without it. Thanks for a great summer recipe!

Fish Fillets Italiano

Excellent! My husband is still raving about this fish. I used thick cuts of Cod, and italian style diced tomatoes. Added some extra seasonings, as suggested by earlier reviews, and--most importantly--added about a pound of raw shelled shrimp at the same time as the fish. Loved the fact that this dish is SUPER quick and very healthy!

Absolutely Sinful Chocolate Chocolate Chip Cookies

My family LOVED these cookies. The sour cream makes them moist. Be careful not to overbake as they can easily become dry. I may try substituting 1 Cup of peanut butter chips for 1 Cup of the choc. chips next time for something different. Thanks for this recipe!

Baked Pork Chops I

Excellent! Be sure to use the thick cut chops and they will come out moist and tender. We loved this recipe as is, but people who don't like the taste of mushrooms could leave out the sauce or cut it in half. I added some baby potatoes around the edge of the pan before baking. Recipe is definitely not quick and easy, but well worth the time preparing. My husband said he felt like he was eating in a restaurant!

Peppermint Meringues

I make this recipe every Christmas to rave reviews. Easy to make, plus it's one of the few cookie recipes that isn't filled with calories. I fold in 3/4 cup of mini chocolate chips at the same time as the crushed peppermint. The chocolate really gives the cookie great flavor. Try it!
