Artichoke Asparagus Pasta Salad

I made this yesterday because I love pasta salads and I really like the ingredient list. However, I found the dressing to be too overpowering. I had several test bites once it was assembled. The RWV and parm cheese seemed way too strong. But once it had set in the refrigerator I tried it again - all I could taste was the dressing even though the RWV tartness seemed to have disappeared. I would gladly use this recipe again but I will definitely be changing the dressing.

Ham Tetrazzini

funny thing, I was making broccoli cheese soup while making this dish - preparing meals for the week. I ended up putting the 2 cups of milk for the soup into the tetrazzini. To fix my mistake, I let it reduce for a while and it came out great. The flavor is good. However, I thought the ham made it really salty - hence the 3 stars. I did add thawed frozen asparagus so it would have a veggie. I'm thinking the next time I make this I will use chicken instead.

White Bean Chicken Chili

This was VERY good. I was unable to find the tomatillos so I substituted a can of Rotel and a jar of tomatillo salsa (made for quacamole). very good. I thought the splash of lime juice added a great little zing!! Will plan to make again.

Blueberry Cream Muffins

I thought this was Ok. Granted, it's my first home made attempt. I used the two cups of blueberries and added a cup of chopped pineapples. I think there should still be more blueberries/fruit added. I also added the cinnamon that another reviewer recommended but it could have used more.

Vietnamese Style Vegetarian Curry Soup

This didn't blow me away but I would still recommend making. I left out the potates and carrots and used chicken instead of tofu. I'm freezing the remainder so I'm sure it will be even better the second time around.

Chocolate Banana Bread

This was good. Most everyone enjoyed it. I was a little disappointed in that it wasn't the flavor I wanted or expected. I think next time I'll make it without the cocoa so I'll have more of the banana flavor.

Asian-Style Pork Chop Bake

I didn't have all the ingredients this recipe called for (left out sherry and ginger root) and it was still delicious! Since I only had time to marinate for 30-60 minutes, I simmered/reduced the marinade to top the pork chops on our plates. YUMMY!

Wild Rice Cheese Soup

We had this last night for dinner and it was yummy! I changed things a little bit to make it more healthy. I substituted the sausage for ground turkey, used reduced calorie soups, and 2% evaporated milk. Served it with garlic bread and it was delicious!! Can't wait to have some of the left overs today for lunch. ENJOY! Comes to about 188 per serving (minus the bread) based on the 12 serving size recipe.

My Chili
