Curried Coconut Chicken

This passed the test for SURE. Thank you! I made a few mods just based on what I had on hand. I added raw sugar rather than granulated, curry oil rather than vegetable, spiced tomatoes, zucchini, and cilantro to top. I simmered for a couple of hours. Topped with fresh coconut and orange slices, a bit of cottage cheese and spinach. Risotto and a couple of grape tomatoes and it hit the nail on the head! As always, your posts and reviews are great:)

Crustless Cranberry Pie

I made this with whole wheat flour, raw sugar, orange zest, blueberries and raspberries, and did half and half maple and vanillia extract. Excellent! Topped with a little fresh butter or yogurt. Mhhhhmmmmm. Thank you:)

Cranberry Orange Loaf

I totally changed this. Not because it didn't look appealing, but I went with what I had. It turned out great!!! I added blueberries and raspberries to it, and used whole grain flour and raw sugar. Two eggs, salt, no baking power or baking soda, and skipped on the oj. I added 1/2 tsp each maple and vanilla extract and subbed walnuts. SO awesome:) I just wanted to share incase anyone was interested! Happy cooking!

Veggie Goulash

This was excellent! I did make a couple of mods based on what was on hand. I drizzled some honey in to give it a little punch of sweetness, and I subbed an unmeasured amount of worchestire for red (I was out). I subbed 2 stalks of celery for GP since I wanted to use it up. We loved it. Thank you so much!:)

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche

I made two of these at once (with 2%), since I knew it wouldn't yield enough for the hungry man. I ran out of goat cheese in the first one, so in the second, I substituted with cream cheese and a little parm. I also sauteed some mushrooms and onions for the second, as I also was short an egg. I followed the suggestion of another, and added 1/3 cup of milk with the two eggs, since I had the mushrooms and onions in there. They both came out great. I can't wait to make this simple and delicious recipe again! (I also cooked at 375F 30 mins to done.) Thank you!!

I have to say, even with the two tablespoons, with the way it was prepared, again, with the herb and beer braised rabbit, it turned out fantastic. Good to know, though!!!:) Thanks!

Baked Ranch Chicken

I quite enjoyed this. I ran out of ranch, so skipped on the oil and added in some greek dressing to the mix. I used Panko, and served it with a kale and quinoa side, eith some roasted red peppers. An all around win, for something so simplistic. Thank you!

Melt - In - Your - Mouth Shortbread

I made these, for the first time, today, and THEY. WERE. A. HIT! So much so that it has been requested that I make another double batch in the morning, before I depart - Visiting family. I don't think I modified anything this round, although I may play around a bit eventually, with drizzles and whatnot. No need to mess with excellent all the same! Thank you!
