Bacon Wrapped Hamburgers

I followed the recipe to the letter and the burgers came out very moist. The flavor was good but just a little bit milder than what I'd hoped. I think next time I'll allow the hamburgers to rest in the fridge for an hour or so to get a bolder flavor. All in all this is still a good recipe!

Creamy Chicken and Wild Rice Soup

OMG--I needed a cigarette after this one! I doubled the recipe the first time I made it; I'm glad I did because it's the only thing either of us wanted to eat for the next two days! The only variation I made was to add a 1/2 c splash of white wine and a bit more pepper. I served it with a freshly baked flax & bran loaf (a little crunchy on the outside but soft in the middle)--perfect for dipping in the soup. THIS will be a staple for years to come.

Baked Scallops

FABULOUS!!! I had 2 lbs of sea scallops so I doubled the recipe to make sure I could coat them. I crushed onion and garlic croutons for my breadcrumbs and followed the recipe otherwise. I served them with parmesan couscous and braised spinach to make it a restaurant quality meal. The BF, who didn't even like scallops, LOVED this recipe--he even packed leftovers for lunch!

Basic Chicken Salad

This is a great basic chicken salad recipe. I followed the directions exactly the first time but seasoned it to my liking the second time. I boiled a whole chicken in a stock pot with seasonings (rosemary, celery seeds, sea salt, black pepper, onion powder and garlic powder) until it was done but not overcooked. I pulled the meat from the bone and chopped it, adding chopped celery, mayo, black pepper and celery seed according to taste. This makes a very flavorful chicken salad!

Flourless Peanut Butter Cookies

I'm low-carbing so I used no-sugar added peanut butter, 1 tsp of vanilla and 1 1/3 c of Splenda. I baked them for about 10 minutes then let them cool for a few more. These cookies were just the thing to help me get my "pseudo sugar fix!" They're packed with peanut butter flavor and not overly sweet.

Awesome Slow Cooker Pot Roast

You can't go wrong with this one. My pot roast was a bit smaller (3.5 to 4 lbs) and I mistakenly added two envelopes of onion soup. I added 1.5 cups of water (to cut to salt) and let the roast cook on low for about 8 hours. There was plenty of gravy/sauce so I served it over some simple mashed potatoes. It was AMAZING!

Molasses Cake

This is just what I've been looking for! My grandmother and her mother made these for me as a child and they were absolutely delicious. Unfortunately, they passed away before anyone got the recipe. This is soooo close to theirs that it brings back very fond childhood memories. I've made this recipe a few times as is but I now add a bit more molasses to mine (approximately 1/4 c) as the coffee seems to actually weaken the flavor IMHO. All in all, it is a fabulous cake, great with coffee or milk or just plain water. And luckily, I can keep this tradition going in my family. Thanks Robin!!!

Oatmeal Raisin Cookies IV

I made these cookies at the request of a friend who loves oatmeal cookies. I didn't even like oatmeal cookies at the time but once I tasted these, they became an instant favorite. These are absolutely delicious!

Cheesecake Brownies

I paired this with the Best Brownies recipe (here on the site) since I don't like box mixes (which tend to be low on flavor--aside from sweetness). The two recipes combined make the perfect cheesecake brownie. And like cheesecake, they're even better the day after baking, once the flavors have blended.

These have a rich chocolately flavor without being overly sweet. Just add a bit of vanilla ice cream while these are still warm and enjoy!

Chicken Breasts with Balsamic Vinegar and Garlic

I omitted the flour based on other reviews and increased the mushrooms to 1 lb. I also used six 4 oz chicken breast portions. Otherwise, I followed the recipe to the letter. This is an awesome atop some noodles; I used shiratake noodles and spooned the sauce over it. Magnifique!

Rich Chocolate Frosting

Whoa--this is quite possibly the best frosting I've ever had in my life!!! When I gathered my ingredients, I realized that I didn't have enough cocoa. It was the night before Thanksgiving so of course the grocery store had sold out of everything except some expensive Dutch import--$9 for 8 oz! But after I tasted it, OH MY GOD! It was worth every penny! I'm sure it's good with regular cocoa--which I'd probably use for every day baking--but I think I'll use the import (which has a more potent flavor) for special occasions. I made a half batch since I was only baking 1 cake. I still had enough left over for 12 cupcakes. Follow the directions and you cannot go wrong.

Baked Salmon Fillets Dijon

Gourmet Sweet Potato Classic

I've used a very similar recipe as a guide for the last 15 years but somehow lost it. This one is so similar that I used it as a guide this Thanksgiving. I didn't measure accurately (more to taste). It is a hit each and every time!

Chipotle-Citrus Marinated Chicken

I followed the instructions to the letter--no substitutions--and let the chicken marinate for a full 9 hrs. I expected a more robust flavor due to the cilantro and chipotle but was sadly disappointed. It's a pretty mild flavored chicken breast that needs a whole lot of something to bring it to life.

Kickin' Collard Greens

I'm a Southern girl, born and raised on southern cuisine. They ARE good but they are NOT your grandma's greens. =) These are a variation from the more traditional Southern collard greens. I tend to put a spin on the more traditional recipes over the holidays so that every meal is not the same. This recipe is perfect for adding that "twist."
