Bacon Wrapped Hamburgers
I followed the recipe to the letter and the burgers came out very moist. The flavor was good but just a little bit milder than what I'd hoped. I think next time I'll allow the hamburgers to rest in the fridge for an hour or so to get a bolder flavor. All in all this is still a good recipe!

Creamy Chicken and Wild Rice Soup
OMG--I needed a cigarette after this one! I doubled the recipe the first time I made it; I'm glad I did because it's the only thing either of us wanted to eat for the next two days! The only variation I made was to add a 1/2 c splash of white wine and a bit more pepper. I served it with a freshly baked flax & bran loaf (a little crunchy on the outside but soft in the middle)--perfect for dipping in the soup. THIS will be a staple for years to come.

Baked Scallops
FABULOUS!!! I had 2 lbs of sea scallops so I doubled the recipe to make sure I could coat them. I crushed onion and garlic croutons for my breadcrumbs and followed the recipe otherwise. I served them with parmesan couscous and braised spinach to make it a restaurant quality meal. The BF, who didn't even like scallops, LOVED this recipe--he even packed leftovers for lunch!
