Good New Orleans Creole Gumbo

I have made this delicious gumbo twice, with very minor changes: beef broth instead of bouillon cubes and water, addition of about a cup of chopped rotisserie chicken, red and orange pepper instead of green, and I left all the vegetables on the coarser side vs. finely chopped. I had to add a little butter to the bacon grease in the roux since I didn't have quite enough of the grease. However, the bacon grease is extremely important for authentic flavor, so be sure not to skip it altogether. Also, have a loaf of French bread on the table so everyone can soak up every last tasty drop. Best gumbo ever!

Southern Pimento Cheese

Slow Cooker Beef Stew I

Adding flour & seasonings directly to the meat in the crock pot and skipping the whole pre-browning step resulted in an amazing broth - only other difference: I didn't have beef broth, so I added a packet of brown gravy mix. Superb stew.

Russell's Fish Stew

This was delicious! I used some frozen haddock, which was perfect for this soup because it is a firm, flavorful fish that melds perfectly with the other flavors of this stew. I also substituted two cans of minced clams with the juice for the clam juice for added texture and flavor. My husband and I enjoyed every drop of this delicious, perfectly balanced soup. I toasted french bread in the oven to a very crisp, crouton-like state and floated it in the soup. Will make this regularly.

Eggplant With Mushroom Stuffing

I love eggplant and wanted to find a dish that would inspire my family to love it, too. This is it! My changes: olive oil instead of butter, a quarter cup of marinara sauce added after cooking the mushrooms and whole grain bread crumbs, and Parmesan cheese instead of Swiss. Easy and delicious!

Clam Chowder Canadian Military Style

DELICIOUS*** beware, you'll want to eat a gallon of it! I cut a bit of fat by using 2 Tbsp butter, made roux with 1/4 cup of flour, then added half of a bottle of clam juice to the other 1/4 cup of flour, blending it well before adding it to the pan. I then added the rest of the bottle of clam juice with the reserved juice from the clam cans, then the water. I also used fat-free evaporated milk and added 1/2 cup of thinly sliced baby carrots. Big-time keeper!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Rave reviews for this dish! I did make a few adjustments to suit my pantry and my family's palates: Used three medium roma tomatoes (diced) instead of grape tomatoes, added 1 cup of torn spinach leaves, and added half of the feta cheese as spinach leaves wilted in the pan with the tomatoes, and then family added feta to their own taste as a final garnish. I also omitted vinegar altogether... Feta added exactly the right tanginess. Great complement to pork!

Best Big, Fat, Chewy Chocolate Chip Cookie

My son (17) made these with delicious results! He added only 1 1/4 cups of semi-sweet chips, and baked them for about 12 minutes, but they were delicious. He says he's never going to buy refrigerated cookie dough again!

I have found a holiday mainstay dessert & vow never to buy a ready-made cheesecake again. Mine cracked but I think that one of the teenagers disturbed it during the hours in the oven... nobody cared! Definitely make this if you want to impress!!!

Easy but bland -- be sure to use spicy sausage or some of the additions mentioned. Don't overbake -- those shells get tough if they are cooked too long (yup, I ruined a tray full).

Broiled Grouper with Creamy Crab and Shrimp Sauce

A definite MUST COOK for those who want to impress family and guests. I substituted Zatarain's Creole Seasoning (a little over a tsp) & didn't add any salt to the sauce besides what is in the Creole Seasoning. Also omitted lemon juice & opted to let my family squirt lemon on top if they preferred. Used uncooked shrimp instead of canned. My family LOVED it.
