Super Squash

Really good recipe! I made it for Christmas and everyone liked it! I used dry minced onion (about 1/4 C.) instead of chopping the two onions, and used some of the stuffing mix instead of the saltines. My store didn't have a great selection of squash, so I used half squash and half zucchini...very good!

Onion Cucumber Salad

Great way to use up those summer cukes! Took this to a dinner party and it was a hit. I only used ONE cup of sugar and substituted red wine vinegar for the white. We ate this after only 2 hours in the fridge and it was still delicious! Will definitely make again!

Lemon Blueberry Drop Scones

They really are like a muffin top instead of a true scone, but they are still delicious! We used 1 cup of whole wheat flour, 1/3 cup wheat germ, brown sugar instead of white, and kefir instead of yogurt. The glaze gives these scones the right amount of sweetness. Thanks for a great recipe!

Fig and Date Bread

Really good bread! I used all dried figs instead of dates and added the zest of one lemon. To increase nutritional value I added 2TBS. of wheat germ and ground flax seeds. We have a huge fig tree and will be making this one again and again! Thanks.

Cheesecake Brownies

Great and quick recipe!!! For a little added decadence, mix in a few tablespoons of cherry pie filling or orange marmalade (if doing the marmalade, warm over gentle heat and add a splash of Grand Mariner!) YUM!

Ham and Cheese Picnic Bread

GREAT recipe! I put one tbs. italian seasoning in the dough and used just ham and mozzarella for the filling. I also added fresh ground pepper to the filling. For the top, I brushed with melted butter and sprinkled a combo of parmasean cheese, italian seasoning and kosher salt. It made the house smell wonderful, and the herbs made the bread so rich! The braid and toppings made this look like true artisan bread! I've also made this with chopped kalamata olives and parmasean cheese added to the dough. REALLY good recipe! Thanks!

Jay's Signature Pizza Crust

Fantastic dough as is written! For extra goodness I put in a tablespoon of dried italian herbs and brush the rim of the crust with garlic butter. Put a light sprinkling of cornmeal on whatever you bake your dough on for a nice crispy crunch!

Good basic recipe! I substituted butter for the shortening and used lemon and apple pie fillings. I did not flatten them out prior to baking as I wanted a deep "well" for the fillings. They did puff up quite a bit in the oven!

Excellent recipe! Did follow the advice of others and added 1/2 cup more honey and 2 extra egg yolks. Cooking time was only 30 min. and I had to cover with foil to prevent to dark a crust. We used the second loaf as french toast the next morning and it was DIVINE! Thanks!

Amish White Bread

Lovely bread! Nice texture and crust! I used raw sugar (less sweet than refined) and it was perfect. I brushed the top of the loaves with egg white prior to putting in the oven and it came out with a beautiful glossy golden color. This is a great everyday bread! Thanks! Edited to add: I substituted 2 cups whole wheat flour for the all purpose and it STILL came out great! A little more hearty, still sweet, and I don't feel so guilty!

Sausage Jalapeno Poppers

Holy canoli! These were awesome! I made them the night before and popped them in the oven when guests arrived. I did put them under the broiler for just a minute to really crisp up that bacon. I'd like to make them again using the cream cheese with chives.

Creamy Macaroni and Cheese

Very easy and good! Took this to Thanksgiving dinner and everyone ate it up! I used mild cheddar and a little less dijon (my kids don't like that sharp/tangy taste) and it came out perfect! Thanks for such an easy recipe!

Apricot Oatmeal Bars

Beef and Bean Chimichangas

These were really good! I took the advice of others and put in taco seasoning. I also substituted a can of black beans for the pepper,onion and refried beans. They turned out nice and crispy without frying. They also freeze well for a quick snack for the kids!

Land of Nod Cinnamon Buns

These are wonderful! I make this twice a week at our house, but the kids want them every morning! Really rich and gooey! I put a handfull of the brown sugar in the pan before putting in the bread so that when you turn it over it flows over the whole thing! To the previous poster...do not use full size frozen dinner rolls. Use the frozen dough balls (about the size of a walnut.) You should be able to find them in the same area in your supermarket, next to frozen bread dough!

Cranberry Pistachio Biscotti

Really good recipe! This was the first time I ever made biscotti and it turned out great! These are sooo good with tea or coffee! I used whole almonds instead of the pistachios...I would not recommend this as they were difficult to cut through and were not crisp in the middle. Slivered almonds might be a better substitute. Thanks!

Basic Biscuits

I made these in my food processor! Throw the dry ingredients into the processor with very cold butter and pulse 2-3 times. Slowly add milk and pulse...voila! So easy my kiddos can make this. Very nice biscuits, thanks!

The Best Rolled Sugar Cookies

Really good cookie recipe! We made these for halloween and they came out perfect! We used colored sugars instead of icing and they were just right! For those that said the dough was too difficult to work with, make sure you keep the dough COLD! If your dough is getting sticky, just put it in the fridge for a few minutes.
