Fragrant Lemon Chicken

Due to the other "bland" reviews we did the following: Run your hand between the skin and meat of the chicken on both sides, loosening the skin from the meat(making like a little pocket). Rub a little salt and pepper on your hands and rub over the meat to season. Place FRESH rosemary stems and lemon slices on the meat and then stretch the skin over and secure with a toothpick or two. I cut tow lemons in half and placed inside the cavity instead of the veggies. The flavor is very lemony with a nice hint of the rosemary. The smell is wonderful! Hope this helps!

Skillet Chops with Mushroom Gravy

Used seasoned bread crumbs and one cup of milk and breading left overs to gravy. It was wonderful! Kids ate it up, literally 'licking' their plates clean! Will most definately make this one again and again!

Microwave Oven Peanut Brittle

Chicken Enchiladas II

Great recipe! I made two alterations though, instead of butter, green onions and chiles I used one can of drained Ro-Tel (hot!) because we like a little extra kick. I also used a Mexican cheese blend instead of cheddar. Thanks!

Easy Quiche

Very easy quiche recipe! I substuted two packages of frozen chopped spinach (thawed and WELL drained) added three more eggs and I had enough for two 8X8 pyrex dishes - one of which went in the freezer for later use! (I'm thinking you could put it in the fridge the night before to defrost and just pop it in the oven for a quick breakfast) Thanks for a great recipe!

Slow Cooker Beef Vegetable Soup

I just LOVE a recipe that you can literally "dump" everything in the pot and forget about it! This is so easy and makes plenty to eat for one meal and freeze the other half for later. I used a large envelope of the beef and onion soup mix...it was just right for us. Great recipe!

The Best Rolled Sugar Cookies

Really good cookie recipe! We made these for halloween and they came out perfect! We used colored sugars instead of icing and they were just right! For those that said the dough was too difficult to work with, make sure you keep the dough COLD! If your dough is getting sticky, just put it in the fridge for a few minutes.

Cranberry Pistachio Biscotti

Really good recipe! This was the first time I ever made biscotti and it turned out great! These are sooo good with tea or coffee! I used whole almonds instead of the pistachios...I would not recommend this as they were difficult to cut through and were not crisp in the middle. Slivered almonds might be a better substitute. Thanks!

Super Squash

Really good recipe! I made it for Christmas and everyone liked it! I used dry minced onion (about 1/4 C.) instead of chopping the two onions, and used some of the stuffing mix instead of the saltines. My store didn't have a great selection of squash, so I used half squash and half zucchini...very good!

Land of Nod Cinnamon Buns

These are wonderful! I make this twice a week at our house, but the kids want them every morning! Really rich and gooey! I put a handfull of the brown sugar in the pan before putting in the bread so that when you turn it over it flows over the whole thing! To the previous poster...do not use full size frozen dinner rolls. Use the frozen dough balls (about the size of a walnut.) You should be able to find them in the same area in your supermarket, next to frozen bread dough!

Beef and Bean Chimichangas

These were really good! I took the advice of others and put in taco seasoning. I also substituted a can of black beans for the pepper,onion and refried beans. They turned out nice and crispy without frying. They also freeze well for a quick snack for the kids!

Country Fried Squash

Great recipe for frying up all those summer squash! My children, who hate veggies, ate this willingly! I decreased the milk to 1/4 cup and added some Frank's Red Hot Sauce to the egg/milk mixture for a little kick! I have also made a batch using half a packet of Ranch mix in the flour for a little extra zing!

Apricot Oatmeal Bars

Made this for a diabetic friend and they loved it! They even requested the recipe. I will make again but might try using almond extract instead of the vanilla and use sliced almonds in the topping. Thanks!
