Pumpkin Ginger Cupcakes

I've made these during the fall & Thanksgiving the past 2 years & they're always a HUGE hit! I've yet to make it with crystallized ginger, maybe this year. I half both sugars since the pudding mix is already sweet & they end up with just the right amount of sweetness. These are light, moist, not too sweet, and are gone before I can frost them!

Navratan Korma

This is my favorite Indian dish, however, this recipe just didn't cut it for me. I used ground almonds, since that's what I had on hand. It doesn't say when to add the nuts, so I added them when I added the paneer. I didn't fry the paneer, as that's just extra fat. I just tossed it in as is and it held its form. After I fried the onions, I added all the spices and cooked the mixture just until the oils from the onions separated, then added the tomato sauce. It's suppose to infuse the flavor. My boyfriend's mom always cooks Indian food (her husband is Indian) and never uses milk or cream. Those are the ingredients that make the dishes so heavy and fattening. Instead she uses Paval's Non Fat Russian Yogurt, which is what I used. This dish was much too hot for my tastebuds. Next time I'll use red pepper flakes instead of cayenne to my liking. When an Indian dish is too spicy hot for you, just add yogurt, which is sour and will balance out the heat. I also added a little bit of cauliflower, since that's how it's served at my fave restaurant. I'll definitely try this again with modifications, as I've had little luck on finding a recipe for this.

Ann's Shrimp Etouffee

I'll have to try this recipe again. I used olive oil instead of butter and cooked shrimp, which turned out chewy because I added it too early. I also used cayenne which made it way too hot. I'll have to repeat this recipe so I can give it a fair score.

Vegetable Chowder

You'll be lickin' your bowls clean! My meat junkie boyfriend even liked this! I omitted the margarine, broccoli and salt (the chicken bouillon has enough salt). I chopped 1/2 an onion in my 'mini prep' which released enough juices to saute it in along w/ 1T of EVOO. I added 1C of frozen corn, used 1% milk, only 1/3 cup of cheese and 1T of cornstarch in place of the flour, as it's only purpose is to thicken the soup. I also added 1t of red pepper flakes. This is my new favorite soup!

Montreal Peppered Steak

My boyfriend loved it! Being a vegetarian, I have no clue how to season a steak, so we were both thrilled with the results. I'll be keeping this on hand for last minute cooking.

Quick and Easy Alfredo Sauce

This is DELISH! I won't be buying the jared version any longer! As Dawn says, it's "quick, cheap, and easy"! I served it over wheat rotini. I used 1/3 less fat cream cheese, 1% milk, and added half a bag of frozen broccoli and the consistency was still perfect. In the future I'll try using shredded parmesan and adding mushrooms, chicken, shrimp, or tuna.

Cream Cheese Corn

This was a quick fix, but the cream cheese made this a heavy dish and made the whole thing taste like cream cheese; I was hoping the corn would just taste creamy. I probably won't make this again.

Classic Fajitas

My boyfriend liked this alot. He said the flavor was different (vinegar) than the usual fajitas, but really enjoyed it! It was easy & quick to prepare, however I gave it four stars, because 1/4c of oil seemed too much.

Quick & Tasty dish! My BF & SIL always add red pepper flakes to everything I make but didn't for this one! I omitted the cream altogether and served it over basmati rice.

Broccoli Beef I

Recipe was okay. The sauce was too sweet, so I added red pepper flakes to balance it out as well as more garlic. Next time I will try adding more veggies & some onion.
