I give this recipe five stars for the idea and concept.... anyone that cooks knows their preferences and how much work they want to put into it and can make adjustments from there.. since we are using a slow cooker, I used raw chicken.. I am married to a Mexican and he prefers fresh so we just used a chicken we raised... also used tomatoes cilantro garlic onion and chilis from our garden... just chopped them up and let it cook all day... made my own enchilada sause with chili ancho... and the tortilla strips are amazing when you make them from hand made tortillas... added black beans that i had washed and sorted.... they cook in plenty of time to not have to use canned... and used fresh corn as well... just shaved it off the cob... it is more work to eat fresh, but ohhhhh so rewarding.... the taste was absolutely amazing... we just served it with jazmine rice.... smelled great and the kids and husband loved it! not to mention my brother in law who is from Guatemala... so all in all ... very good!
