About this Cook
I love to cook. I'm still learning but I'm getting better at it. I'm a newlywed and I am enjoying cooking lots of dishes for my husband. He loves being the guinea pig for testing out new meals! I also have a really fat cat named Taz. I am also a pediatric nurse.
My favorite things to cook
I like to cook a whole variety of different foods. From stir fry to lebanese food to enchiladas. My mom cooked the same things over and over again when I was growing up, and I like to be different and try new things.
My favorite family cooking traditions
We always make pecan short bread cookies for Christmas. Corn cassarole is also a hit during the holidays.
My cooking triumphs
Cheese cake, stir fry, and stuffed lebanese zucchini come to mind first. They are very yummy. I plan on adding the zucchini recipe to this site once I tweak it just a tad. :)
My cooking tragedies
One time, I accidentally put a plastic lid over my baking pan while I was baking pork chops. The plastic melted and the smell was horrible! The porkchops were ruined and I just had to throw the whole pan out. It took forever to get the smell out of the apartment, and the platic out of the stove. Never again will I do that!

Shrimp Lemon Pepper Linguini
This was great! I doubled the sauce and it was awesome! I used whole wheat linguine. Our two year old really liked it and so did my husband. Will make again!

Broiled Herb Butter Chicken
I made it home just before the winter weather struck our area. I needed a dinner that I could make with ingredients that I had on hand and stumbled upon this recipe. I made the recipe with the exact meaurements listed, the only things different was that I used chicken breast tenders and I baked it at 375 for about 37 minutes covered with foil. The sauce is very good. It would go great on top of brown rice. I served it with brussel sprouts this time for a low carb dinner and it was great as the brussel sprouts soaked up some of the butter sauce! Yum! Will defintely be worth a repeat!

Shrimp Scampi Bake
I rate this dish 4 and a half stars! The taste was very good! This is a great base recipe to start with and then let your creativity go with it! I had only about half the shrimp that were required for this recipe, so I improvised and put the baked shrimp on top of a bed of whole wheat angel hair and added sliced olives, sundried tomatoes, and a can of quartered artichoke hearts. I did use the full amount of butter in the recipe. My husband liked it and went back for seconds, and our 2 year old son ate it happily. You know it's good when a toddler eats it! :) Will make again! UPDATE: 1/3/15 Had the leftovers for dinner. The flavors really seemed to blend well overnight and it was even better tonight!!! I also sprinkled parmesean cheese on top! Delicious!
