Big Soft Ginger Cookies

These were delicious. I had to make another batch over the holidays because they disappeared so fast. I also used the gingerbread frosting from this site (you need to double that recipe to cover 1 batch of these cookies). I used room temperature butter instead of margarine because I like it better. I also doubled the spices just because we love the kick-but it tends to be too much for kids. I didn't have to flatten a whole lot like another review stated because butter tends to spread out. Someone complained that they were too flat. Well ginger and molasses cookies are supposed to be flat. These aren't drop cookies! Make sure you don't put them too close together and you will have mighty fine cookies.
