Korean Salad with Sesame Dressing

This was very spicy and husband loved it. Didn't change anything. Be prepared for a really spicy dressing. Yummy!

Mushroom Chicken Piccata

My husband LOVED this dish. This was his first time eating piccata. I have always had veal piccata but decided to try this recipe out since I had chicken breasts on hand. I enjoyed it but my husband couldn't stop raving about it. I doubled the sauce because we love sauce and added doubled the paprika with the flour mixture. Also added capers at the end and husband found a new love for capers. He didn't use to like capers but in this dish it was perfect.

Mayan Couscous

This was absolutely delightful. I adjusted the recipe since I made the whole box of couscous so I pretty much tripled all the other ingredients. I also used beef broth instead of water. My husband could not stop talking about this dish. We had leftovers and ate it two days later and it tasted even better. I will definitely be making this again, and again. It is a keeper in our house. Thanks for the recipe!

Roasted Asparagus and Yellow Pepper Salad

What a fantastic salad! Thank you. Roasted the almonds in the oven for 9 minutes while the asparagus and peppers baked for 18 minutes total time. Husband raved about this salad and he doesn't usually like asparagus or bell peppers. He absolutely LOVED this salad and ate leftovers the next day. Great recipe. It's a must try and really easy.

Gourmet Mushroom Risotto

Husband and kids thought this was great. My first husband was European Italian and owns a four star authentic Italian restaurant so our kids are spoiled when it comes to real risotto but they thought this was really good. Used a lot of the reviews to help me do my best on this risotto. Only 2nd time at trying to make risotto from scratch and all the reviews really helped me. Took about 60 minutes from start to finish cooking time. Kept chicken broth hot on stovetop. Also added 1/8 cup white wine when cooking mushrooms to avoid sticking to the pan. Sorry for such a long review. All in all, I will make this again when I am full of energy but it does require a lot of babysitting.

Rich and Creamy Beef Stroganoff

My husband thought this stroganoff was the BEST I've ever made. This does take a while to prepare but it was worth it. Didn't change too much except did not have cream cheese so I doubled the sour cream. Still was yummy. Also used dijon mustard instead of yellow mustard. Thanks for the recipe SanFrancook. I will make again when I have the energy. :)

Asian Coconut Rice

This was a completely FUN side dish! I served it with Asian Glazed Chicken that was infused with lots of ginger. I prepared it in our rice cooker and it came out perfect. I used enough liquids (water and coconut milk together), as I would use if I only used water to cook the rice. It came out so good and smelled fantastic. My husband loved it and usually only likes sweet coconut candies and desserts. This was perfect (not sweet) and I didn't have to babysit it while it cooked in the rice cooker. Also, the coconut milk had flakes of coconut in it which really made for an authentic coconut rice. Thank you so much Silvrezs!

Hot Tamale Pie

This is a fabulous recipe but since I changed the ingredients around, I'm rating it a 5 based on the changes I made because I didn't have all the ingredients. I substituted 2 packets of chipotle taco seasoning mix for the chipotle powder. I sauteed one fresh jalapeno pepper, 2 cloves of minced garlic and one large sweet onion in olive oil. Browned the two pounds of ground beef, added the sauteed veggies and poured 20 ounces of hot salsa in with the meat mixture. Husband LOVED the dish. He always bragged about his mom's tamale pie but he said that the one I prepared for him was the BEST he ever had. Whew! I also used canned corn instead of frozen corn. Didn't have poblano peppers at our grocery store and it's why I used a minced fresh jalapeno. I will certainly be making this recipe again. This is just a great website for wonderful recipes. I have never been disappointed. Thank you so much Chef John.

Best Steak Marinade in Existence

My husband just came home from an exhausting four day scuba diving trip and I prepared this marinade as a "welcome home honey dinner." I used fresh garlic and low sodium soy and did everything else as suggested EXCEPT I didn't blend I just added all of the ingredients in a ziploc bag. I used fresh chopped garlic and kept everything else the same. My husband could not stop raving about how tender and tasty the steaks were (I used flank steak boneless ribs)... I pan fried the steaks in 2 TBS of olive oil and then added fresh mushrooms, butter and a TBS of cornstarch with the remaining marinade. We will definitely be using this recipe again. I did find it on the saltier side (reason for four stars) but my extremely picky husband loved it and that is all that mattered to me. He will definitely remember this "welcome home honey dinner" which I will be preparing again very soon OR maybe it will be a traditional meal for those times I welcome him home. We'll see...
