Banana Banana Bread

I needed a quick way to use up one banana that was getting dark, so I took this recipe and cut it in half using just the one banana. I didnt have a small loaf pan, so I poured the mixture into my mini cupcake pan and baked for 20 mins at 350. The cupcakes turned out perfect! They have a mild flavor and soft, almost fluffy texture. Took me 30 mins total for a perfect after-school snack for the kids!
