Cheesy Creamed Spinach Casserole

I made this for Thanksgiving and it was a big hit - everyone asked for the recipe!! I even made it the night before and stored it in a plastic container; just had to pour it in a casserole dish and bake it the next day. The recipe fails to mention when to add the soup mix - I assume you just add it with the sour cream. I also added a little cream cheese, sliced almonds and parmesan cheese. This is a definite keeper!

Kung Pao Chicken

I can't believe how good this came out! And it was not that difficult at all. I was skeptical but thought I'd give it a try and I just happen to have most of the ingredients on hand. I also added some chopped green bell pepper and a julienned carrot. I didn't have peanuts but as another reviewer suggested, I added some peanut butter. The family loved it, including my very picky teenage daughter! Great recipe and something different for a change. Thx!

Pizza Pinwheels

What a great idea!! I made this using homemade pizza dough (made in my bread machine) and not only was it simple, it was a great hit with the kids. I will definitely use this for the kids' b-day parties in the future. They're easy to handle, yummy, and make no mess. Thank you!!!

White Cheese Chicken Lasagna

Great Pumpkin Cookies

VERY nice cookies - almost addicting once you get started eating them!! The recipe is very easy. I saved time by making and freezing the dough ahead of time. When I was ready to bake, I placed the frozen dough in the fridge the night before to thaw and baked the cookies the next day. They were a hit with the whole family! Thx for this recipe!

Award Winning Soft Chocolate Chip Cookies

I halved this recipe because the entire recipe would've been too much. And it still came out to a lot of cookies! They were wonderful and were gobbled down in *no* time!! I used dark brown sugar - gave it a nice flavor.

Fluffy Canadian Pancakes

I was a little hesitant at first to make these because there were no reviews (yet). I was also a little wary of using 3 eggs and just 1 cup of flour. I thought they might taste too "eggy". However, I decided to try them and I must say they're terrific! A little "eggy" but in a good way. Granted, there's a little "extra" work in beating the egg whites but it's worth it. If I have a little time to cook, this will be the pancake recipe I will use - it's worth having to use the extra bowl and digging out the mixer. :-) If I'm really really pressed for time, I'll use my regular 'one bowl' recipe.

These came out wonderful and were gobbled down in no time! One friend described them as 'crispy' and then when they hit your tongue they just seem to melt.... My husband already asked me to make another batch! Definite keeper!!

Sunday Company Chicken

Hubby doesn't like creamy sauces so when I sent him out with a grocery list that included heavy cream, he asked, "What's this for?" After telling him I needed it for the sauce for this chicken dish, he rolled his eyes and said, "Oh no - please don't make a creamy sauce..." ;-) I made the dish and and he really liked it (and the sauce)!! I enjoyed the flavor as well and was surprised as it's so easy to make! I made one change: I browned the chicken before baking it with the sauce. I think that was better. Will keep and use again for sure!

Chicken and Bacon Chowder

Made this on a very chilly, dreary, wet, blustery fall day here in Austria and it was just the right thing for dinner! Very tasty! Surprisingly I had most of the ingredients at home (including the cooked chicken from another meal that froze to use another day) but had to sub a few other things. I didn't add celery (because I didn't have it) but I added chopped fresh zucchini and red bell pepper (because I had it them in the fridge and they needed to be used!). I also used skim milk instead of half-n-half. Came out great! I chopped the fried bacon up into small bacon bits (in my Moulinette chopper) and added it back into the soup. This was a big hit with everyone today! Thanks! I plan on making this again as the recipe's written; I can imagine it's good with celery and half-n-half.

Vegetarian Refried Beans

Absolutely *loved* this recipe! I needed refried beans to make a 7-layer dip for a party and thought I'd try my hand at making my own beans for the dip. I omitted the cumin, added chopped green bell pepper (half a pepper) and handful of chopped green onions (only because I had them on hand) and it smelled wonderful while it was cooking! I had to drain some of the liquid before mashing them (or the consistency wouldn't be thick enough). I tried a bowl w/ some shredded cheese on top and it was *yummy*! I'm sure it'll add special flavor to the Mexican 7-layer dip and taste better than canned beans. It is a very simple recipe; just a bit time consuming as it has to simmer a while but if you're home anyway, it's no big deal. Loved this!

Moroccan Salmon Cakes with Garlic Mayonnaise

This was very easy to make and delicious! Even my picky kids enjoyed it very much. I thought it would taste very "orangey" having to cook the couscous in orange juice but it doesn't at all... It's very flavorful and the patties fry nicely.

Banana Cheesecake with Caramel Sauce

I made this for a dinner party and it was a big hit! Everyone loved it! Took the advice of different people here. I doubled the amount of mashed bananas and I think it definitely gave the cake a better, stronger, more "banana" flavor. I also "cheated" and just used a jar of caramel sauce from the store. Shortly before serving, I decorated the top with the caramel sauce and sliced bananas around the rim. This cake is so easy but tastes like you slaved over it for hours! Will definitely be making this again!!

Fruit-Topped Buttermilk Pancakes

I just made the pancakes but not the fruit topping. The pancake recipe alone is wonderful! To make the pancakes "fluffier", I added the tsp of baking soda to the buttermilk and set it aside for a bit while I got everything else ready. This really made the pancakes rise wonderfully and they were light & fluffy! This will be our standard pancake recipe from now on!!

Chantal's New York Cheesecake

This was excellent! FYI, if your cheesecake cracks from baking, I have a little tip/suggestion... What I do is make a quick "Sour Cream Topping" for it. Use 1 pint of sour cream, 6 TB sugar, 1 tsp vanilla and a tsp of Grand Marnier (optional. Whisk everything together until well blended. Spread on top of the cheesecake during the last 5 min. or so of baking, then cool and chill the cake. That usually covers the cracks pretty well.

Never Fail Applesauce Spice Cake

This recipe is fantastic and was a big hit! I picked it because I needed to use up some leftover buttermilk and I just happen to have applesauce at home as well. The only thing I changed was instead of 1 1/2 cups of white sugar, I did 1 cup of sugar and then a 1/2 cup of soft dark brown sugar. Instead of all of the individually listed spices I just used pumpkin pie spice and a little extra ground cinnamon. Just minor changes - nothing radical - and again, this is a fantastic cake!
