Banana Cheesecake with Caramel Sauce

I made this for a dinner party and it was a big hit! Everyone loved it! Took the advice of different people here. I doubled the amount of mashed bananas and I think it definitely gave the cake a better, stronger, more "banana" flavor. I also "cheated" and just used a jar of caramel sauce from the store. Shortly before serving, I decorated the top with the caramel sauce and sliced bananas around the rim. This cake is so easy but tastes like you slaved over it for hours! Will definitely be making this again!!

Vegetarian Refried Beans

Absolutely *loved* this recipe! I needed refried beans to make a 7-layer dip for a party and thought I'd try my hand at making my own beans for the dip. I omitted the cumin, added chopped green bell pepper (half a pepper) and handful of chopped green onions (only because I had them on hand) and it smelled wonderful while it was cooking! I had to drain some of the liquid before mashing them (or the consistency wouldn't be thick enough). I tried a bowl w/ some shredded cheese on top and it was *yummy*! I'm sure it'll add special flavor to the Mexican 7-layer dip and taste better than canned beans. It is a very simple recipe; just a bit time consuming as it has to simmer a while but if you're home anyway, it's no big deal. Loved this!

Chocolate Custard Bread Pudding

I usually only seek out recipes with very good ratings and this one had no rating at all.... However I had so many left over bread cubes from another recipe that I was looking to use them up and I decided to take a chance and try this. It's pretty good although I think the recipe instructions are a bit poorly written in some parts. In the beginning, I wasn't sure if I was doing this right. In any case, this has a nice, chocolately flavor and is not too sweet (which I liked). It is definitely easy and was a good way to get rid of some leftover bread. I prefer it warm so I after it had baked and cooled, I just pop the portions in the microwave for a few seconds and it tastes very nice. All in all, this was pretty good!

Great Pumpkin Cookies

VERY nice cookies - almost addicting once you get started eating them!! The recipe is very easy. I saved time by making and freezing the dough ahead of time. When I was ready to bake, I placed the frozen dough in the fridge the night before to thaw and baked the cookies the next day. They were a hit with the whole family! Thx for this recipe!

Cheesy Onion Roll-Ups

I made this for a party and it went over well. Instead of jalapenos I added fried, crumbled bacon. That was good! Next time, though, I would reduce the sour cream to about 3/4 cup and increase the grated cheese to about 3/4 cup.

Hornets Nest Cake

This cake tastes wonderful and is really easy. The instructions are written a little confusing, I think. You need to mix the cake mix batter as written on the instruction box and then add the pudding. It sounded to me like you add the yellow cake mix powder to the pudding. I figured it out when the mass looked strange :-) Good cake!

Grandma's Doughnuts

These were quick, easy, and yummy! I can whip up 6 doughnuts (and doughnut holes!) in no time! :-) I love them with chocolate glaze; my kids liked them better with powder sugar. A keeper!

Fruit-Topped Buttermilk Pancakes

I just made the pancakes but not the fruit topping. The pancake recipe alone is wonderful! To make the pancakes "fluffier", I added the tsp of baking soda to the buttermilk and set it aside for a bit while I got everything else ready. This really made the pancakes rise wonderfully and they were light & fluffy! This will be our standard pancake recipe from now on!!

Marinated Mushroom and Eggplant with Peanut Sauce

The combination of mushrooms and eggplant is great and the marinade is easy and delicious. However, we did not think too much of the peanut sauce and the kabobs actually tasted wonderful without it.

Sunday Company Chicken

Hubby doesn't like creamy sauces so when I sent him out with a grocery list that included heavy cream, he asked, "What's this for?" After telling him I needed it for the sauce for this chicken dish, he rolled his eyes and said, "Oh no - please don't make a creamy sauce..." ;-) I made the dish and and he really liked it (and the sauce)!! I enjoyed the flavor as well and was surprised as it's so easy to make! I made one change: I browned the chicken before baking it with the sauce. I think that was better. Will keep and use again for sure!

Tuna Mousse

I just made this for Thanksgiving and it got raves reviews all around (and I had several requests for the recipe!). It was extremely easy (it was so easy, I thought at first I was making it wrong!) and very tasty. My kids didn't eat it, but my friends' kids just loved it! I added some chopped celery and chopped green onion. Very nice - thank you!!!

Chicken and Bacon Chowder

Made this on a very chilly, dreary, wet, blustery fall day here in Austria and it was just the right thing for dinner! Very tasty! Surprisingly I had most of the ingredients at home (including the cooked chicken from another meal that froze to use another day) but had to sub a few other things. I didn't add celery (because I didn't have it) but I added chopped fresh zucchini and red bell pepper (because I had it them in the fridge and they needed to be used!). I also used skim milk instead of half-n-half. Came out great! I chopped the fried bacon up into small bacon bits (in my Moulinette chopper) and added it back into the soup. This was a big hit with everyone today! Thanks! I plan on making this again as the recipe's written; I can imagine it's good with celery and half-n-half.

Potato Cheese Calico Soup

This came out very nice! I made a few slight changes, though. Along with the potatoes, I boiled chopped green bell pepper, chopped onions and sliced mushrooms until soft. I pureed all of that together (my kids don't like 'chunky' soup) until smooth. I added some light cream I had in the fridge and used finely shredded mild cheddar instead of Asiago cheese.... It tasted great! I had some leftover soup in a container and the next day I made up a sort of 'lasagne' dish using this soup as the "sauce"! I figured I didn't even need to add anything to it; not even the cheese! I cooked up some ground beef, alternately layered the (cold) soup, lasagne noodles, chopped fresh baby spinach and ground beef in a casserole dish and baked it all up until brown & bubbly. It came out great and the fam had no idea it was the potato cheese soup from the previous day! So this recipe easily "stretches". Thanks!

Twice Baked Potatoes I

While these are a little bit of work, they are very easy and taste wonderful! I could hardly believe it when my picky kids ate every last bite! I added some cream cheese to the mixture and it gave it a creamier, richer texture and flavor.

Olive Cheese Appetizers

These are a little work, but the results are great! My neighbor immediately asked for the recipe and my (picky) mother-in-law liked them, too. I made them early in the day and kept them in the fridge. In the evening, I just popped them in the oven and voilá! They were done in no time.

Sensational Salmon Loaf

I would've only given it two stars but my family enjoyed it more than I did. I thought it would be moister and tastier. But, like I said, the hubby and kids said it was good. In addition, I grated a carrot finely and added that as well as a peeled and seeded chopped tomato and a little chopped garlic. It was interesting to try but I don't think I'll be making it again.

Simmering Chicken Strawberry Kabobs

I used turkey instead of chicken and it was good, too. My husband said the marinade was a little too "lemon-y" for his taste but I liked it. The real surprise was the strawberries! If you've never had a roasted strawberry then you're in for a treat. They taste really nice. We lost a few strawberries when they fell off the kabobs and into the fire but on the whole most of them made it. It does look exotic and is something different for guests. A keeper!

Fluffy Pancakes

This recipe is excellent and I can't believe how fluffy the pancakes came out! However, while eating them I realized one little thing was missing - a little vanilla extract. This recipe is definitely a keeper and next time I make them, I will add some vanilla extract.
