Fluffy Canadian Pancakes

I was a little hesitant at first to make these because there were no reviews (yet). I was also a little wary of using 3 eggs and just 1 cup of flour. I thought they might taste too "eggy". However, I decided to try them and I must say they're terrific! A little "eggy" but in a good way. Granted, there's a little "extra" work in beating the egg whites but it's worth it. If I have a little time to cook, this will be the pancake recipe I will use - it's worth having to use the extra bowl and digging out the mixer. :-) If I'm really really pressed for time, I'll use my regular 'one bowl' recipe.

Sweet and Sour Sauce I

Award Winning Soft Chocolate Chip Cookies

I halved this recipe because the entire recipe would've been too much. And it still came out to a lot of cookies! They were wonderful and were gobbled down in *no* time!! I used dark brown sugar - gave it a nice flavor.

Tuna Mousse

I just made this for Thanksgiving and it got raves reviews all around (and I had several requests for the recipe!). It was extremely easy (it was so easy, I thought at first I was making it wrong!) and very tasty. My kids didn't eat it, but my friends' kids just loved it! I added some chopped celery and chopped green onion. Very nice - thank you!!!

Great Pumpkin Cookies

VERY nice cookies - almost addicting once you get started eating them!! The recipe is very easy. I saved time by making and freezing the dough ahead of time. When I was ready to bake, I placed the frozen dough in the fridge the night before to thaw and baked the cookies the next day. They were a hit with the whole family! Thx for this recipe!

Cafeteria Carrot Souffle

Based on all of the rave reviews, I decided to try this for company. I followed one of the previous suggestions to reduce the sugar and only used 3/4 cup of sugar. Still, I found it almost too sweet and if I make this again, I may even reduce the sugar to 1/2 cup. I thought it was ok (I have to admit I don't really like carrots in general though) and my husband *loved* it! I do have to admit it's incredibly easy and I loved that aspect. Very nice!

Buttery Cinnamon Cake

I made this for a coffee & cake afternoon and it was a big hit! Very easy and made with ingredients you usually have around the house anyway. Took one user's advice and used brown sugar instead of white sugar for the cinnamon syrup and I have to say it came out VERY good!

Cheesy Onion Roll-Ups

I made this for a party and it went over well. Instead of jalapenos I added fried, crumbled bacon. That was good! Next time, though, I would reduce the sour cream to about 3/4 cup and increase the grated cheese to about 3/4 cup.

Cheesy Creamed Spinach Casserole

I made this for Thanksgiving and it was a big hit - everyone asked for the recipe!! I even made it the night before and stored it in a plastic container; just had to pour it in a casserole dish and bake it the next day. The recipe fails to mention when to add the soup mix - I assume you just add it with the sour cream. I also added a little cream cheese, sliced almonds and parmesan cheese. This is a definite keeper!

Pizza Pinwheels

What a great idea!! I made this using homemade pizza dough (made in my bread machine) and not only was it simple, it was a great hit with the kids. I will definitely use this for the kids' b-day parties in the future. They're easy to handle, yummy, and make no mess. Thank you!!!

Creamy Potato Pork Chop Bake

This gave me a good basic idea and after a few changes, it came out really nice. I didn't have frozen hash browns at home so I just grated 4 potatoes and added it to the mixture. I also grated a reg. onion. I didn't have sour cream but I had heavy cream and used a 1/2 cup of that. I also crumbled some fried bacon into it. This is nice because you can vary it to other things that need using up in the fridge.

I doubled this recipe for a party and while it got raves reviews, I personally thought it was a tad too salty because of the large amount of bacon. Next time I do this, I will scale down a bit on the bacon and then it will be *perfect*!

Bacon Water Chestnut Rolls

This was a big hit and it's very simple. The sauce is great, although next time I may reduce the amount of brown sugar a little bit. At the next office party or gathering I'm making these again. Great recipe!

Simmering Chicken Strawberry Kabobs

I used turkey instead of chicken and it was good, too. My husband said the marinade was a little too "lemon-y" for his taste but I liked it. The real surprise was the strawberries! If you've never had a roasted strawberry then you're in for a treat. They taste really nice. We lost a few strawberries when they fell off the kabobs and into the fire but on the whole most of them made it. It does look exotic and is something different for guests. A keeper!
