I am a mother of 2 great little boys,Gregory is 8 and Ethan is 1.I have a full-time job & go to school full-time.So as you can probably guess I am a very busy person. But I LOVE to cook and bake so I always find time to be in the kitchen!
My favorite things to cook
I like experimenting with new recipes. But my absolute favorite thing to experiment? Cookies! Lots of cookies. My sons love to help me bake cookies. Well Gregory helps and Ethan just loves to lick the beaters haha.
My favorite family cooking traditions
I love baking cookies at Christmas time. Me and the boys make dozens and dozens of all kinds of cookies imaginable and give them away to friends and family.
My cooking triumphs
I feel triumphant just to get a hot dinner on the table every evening for my family! haha

French Fried Potatoes
Excellent! The sugar water really does work...I cut my fries very thin because I like them xtra crispy and making them the normal way you pretty much have to cut them very thin to get them crispy...Big mistake when using the sugar water! They were TOO crispy...I cannot wait to make these again...I will just make sure to cut them a lot thicker this time!

Sugar Cookie Frosting
I have tried TONS of frostings for cookies. My hunt is over. This frosting is excellent! Not too sweet & not too hard. It dries JUST hard enough to stack. I do prefer almond extract over vanilla in cookie frostings so I did substitute the vanilla for almond. I also added 1 tsp of light corn syrup. Perfect. I am so addicted to this frosting that I have made cookies 2 x's a week for a few weeks now!!! Thank you for such a great recipe.

Red Enchilada Sauce
I did change this recipe a little...I doubled the recipe & used 2 cups of chicken broth and 1 cup of water...It was a little brown and watery so I added one 12 oz can of tomato paste to thicken it up and give it more of a red color...I also put the salsa in the food processor to make it smoother & I added a little more salsa than was called for...I put it on enchiladas & this was delicious! I usually do not care for enchiladas but I ate until I was so stuffed I couldn't eat another bite...I am glad I doubled this recipe so I can freeze what is left over...This recipe was fast & easy...I will never use any other sauce on my enchiladas...If I could give more stars I would!!
