One of my favorite recipes on this site. I've been on Atkins for over a year, and this makes a great low-carb breakfast or lunch! I usually use shredded cheddar instead of Muenster because I can buy it in bulk - it tastes great no matter what cheese you use though. I also add some Feta cheese when I have it. I also like to add a cup of sour cream - if you're trying to eat low-fat or low-calorie I wouldn't recommend this, but it gives the quiche a nice texture! That being said, I still think this recipe is perfect as written! I make it at least twice a month.
