Chef John's Make-Ahead Turkey Gravy

5 STARS? Yes it's that good!!! takes a lot of time but seriously, I had the best turkey gravy in the middle of October without all the other work. I poured this golden gravy over some wild rice burgers with sauteed mushrooms and hey, best. day. ever.

Beef and Cabbage Stew

ok, is it fair to give this 5 stars when I didn't follow the recipe? I just had to because this soup is so delicious and soooooo good for us!!! I used 1 pound of beef, 15 oz tomato sauce, 6 cups of beef broth, 4 large handful of coleslaw mix (Sam's club), 2 large carrots, 1 onion, 1 c each of frozen green beans and corn and salt and pepper...and one tsp of sugar to balance the acidity of the tomatoes. OH WOW! simple, delicious, hearty, healthy goodness in a bowl. Exactly what I want my family to eat to nourish themselves!!! the twenty minutes of simmering are almost up and the troops are starting to circle!!! I've taste-tested a little bowl already and I can hardly wait for more!!!!

Brunch Egg Bake

REALLY FABULOUS! I have a thing about cheese...it should be optional in all things in my opinion and so my little family has had to learn to just add some to whatever they want. so...I didn't add any cheese. also I didn't sautee the veggies first, I just chopped up fresh mushrooms, green onions, green peppers and deli turkey. I whipped up the egg part, poured it in the pan threw the vegetables and turkey over the top, added some ground pepper and baked it. REALLY FABULOUS! it was just one of those nights where I seem to get everything backwards but fortunately this egg bake with some toast and a glass of milk made a really, really REALLY FABULOUS dinner!

Slow Cooker Ribs

holy buckets! one of the few recipes I have scanned the reviews and decided to make as it without changing anything (and yes, I believe we should only rate the recipe as is not on a bazillion changes)! THIS WAS ABSOLUTELY DELISH. I shredded the ribs and served it over rice with some steamed broccoli. SO LOVELY! I even went to far as to make my own teriyaki sauce since I didn't want to run to the Asian store for that one ingredient. THANK YOU!!!

Chef John's Gazpacho

SHUT THE FRONT DOOR PEOPLE! This soup is phenomenal. Who knew that a simple, cold, tomato summer soup could taste like this? I'd all but given up but this recipe showed up in my inbox and I thought "what the heck, we'll try one more gazpacho recipe." SO THANKFUL I DID!!! and I'm sorry to say I did change one thing. I did not see the 4 tomatoes called for first thing. so I got home and had all the rest of the ingredients but not those. So-what to do??? I followed the rest of the directions and then added 2 cups of low-sodium V8. This soup is amazing. I'm letting it chill now as I write but it already tastes so good I know this is going to be a once-a-weeker for the rest of the summer! and I am doing great things for my body!!! also I didn't strain the blenderized cherry tomatoes. and I used 1/4 of a yellow onion and blenderized that with the cherry tomatoes. I'm coming in with a spoon, boys, and y'all better get out of the way!!!!

Guacamole

WHA!!! I am 40+ years old and it took me this long to find out how to make delicious guacamole! Don't be me. Make this. Share it with the people you love the most. Eat quickly and then make them share their portion with you. Lick the bowl. Repeat. You won't be disappointed.

Refreshing Peach Sangria

Wow! I'm glad I've tried several sangria recipes so I can give a comparative review. I love this stuff! I've made heavy, boozy delicious sangrias appropriate for summertime weekend PAR-TAYS!!!! and I've made light, boozy delicious peachy sangrias appropriate for a girls night in of party-planning and now I have this 3rd option in my back pocket ;) This stuff is perfect for a lunch date with the girls when you still have to be able to drive home and get dinner on the table for your crew. It's light, refreshing and won't get anyone smashed! Exactly like what you get from the restaurant chains on their 2-fer-1s! LOVE LOVE LOVE!!! (UPDATE: I asked a friend to bring the OJ and she brought blueberry juice instead-guess what! still delish, different but sooooo good and SO SO SO PRETTY!!! just can't go wrong)

Strawberry-Pineapple Smoothie

oh wow is this good!!! I am a smoothie girl. Smoothies are that rare edible that can be as healthy (and still delicious) as you want or can be just pure sugar and satisfy that craving you have for something "bad for you." This one fits both bills at the same time. I used frozen strawberries, a small can of crushed pineapple, plain unflavored yogurt (and I added a splash of vanilla to compensate), skipped the ice cubes (its the middle of winter and I am tast-testing smoothie recipes to make up a recipe book for all my nieces for Christmas and I actually like thick smoothies and without the ice cubes this was the perfect consistency to me)and added 1 T ground flax seed which makes every smoothie good for me!!! LOVE IT!!!

Cranberry Orange Breakfast Bread

LOVE LOVE LOVE! I considered lessening the stars because there should really be mention that the orange juice should be warmed to help the yeast but oh well...read your breadmachine manual and you will find that information out for yourself. It makes a dense, delicious loaf and I've since modified it by trading one cup of bread flour for whole wheat, adding 1/4 c ground flax seed and 1 T vital wheat gluten. It is a real treat!!!

Cheesy Ramen Noodles

Thank you for submitting this! I always read through reviews and take it from there since it seems as though no one actually follows the recipe! But I am grateful for all the hints and tips. I left about a 1/4 of the water, added 2 slices of cheese and a squeeze of hidden valley ranch. I stirred it up over the still very hot burner until it was good and creamy and scooped half onto my plate and then added a generous dollop of tabasco to husbands, gave it a quick stir and spooned it onto his plate. I only used half the seasoning packet and it was delicious! With a piece of baked chicken and oven-roasted cauliflower I had very little guilt about serving this!

Apple Crisp II

So. Darn. Delicious!!! I used haralson apples and made this with my favorite little 5 year old and two hours later and a scoop of vanilla ice cream we were all in heaven!!! great recipe and very easy!!! I did use a lot of apples, I just didn't think the amount made a big difference.

Buttermilk Syrup

My daughter and I patronize a restaurant that has the best french toast with a superb caramel sauce and whaddayaknow-turns out that caramel sauce is BUTTERMILK SYRUP!!! WOOOOOHOOOOOO!!!! Luckiest day ever when I found this recipe...I see years of buttermilk syrup in my future....mmmm

Oven Pot Roast

I cooked it for only 2.5 hour and it was perfect! The hardest thing about cooking a delicious pot roast is the timing and so I'm glad I got that down. Otherwise the seasoning was spot-on for some excellent gravy!!! I did substitute beef broth for the vermouth and I skipped the butter and just did a once around with the olive oil bottle. YUMMMMMMY!!!

Homefried Potatoes with Garlic and Bacon

oh wow! I rough chopped 5 medium-sized russet potatoes. I boiled them for 15 minutes exactly and then threw them into the pan I'd already cooked off the bacon in. They were mushy!!! Operator error :)I cooked the potatoes for another 15 minutes throwing in the onions for the last ten. These were delicious! The flavor is OUTSTANDING!!! Next time (and there will be a next time and it might even be tomorrow night!!!) I will boil for only 10 minutes and keep the frying time to 15 minutes. I only fried up 5 slices of bacon and I ended up adding a generous pour of canola oil and it was just the right amount of oil. I didn't get any crispiness but hey! THE TASTE!!! Last thing, I generously salted the water when I boiled the potatoes. I will always do that from now on. when I tested the potatoes for doneness I ended up just eating that one little hunk and it was great! LOVE LOVE LOVE these potatoes and my meat-and-potatoes-brother-in-law CHOWED LIKE THERE WAS NO TOMORROW!

Jersey Fresh Tomato Soup

WOOOHOOO!!! Score! I am going the vegetarian route and this soup just looked so good I had to try it. I did modify a bit hoping it would turn out and it sure did!!!! I chopped up two large carrots and 1 good-sized onion. I boiled all that in 2 cups of chicken broth for half an hour and then blended it totally in my Vitamix. I then poured it back into my soup pot and added 2 cans (15 oz each) of tomato sauce-a Sams club oops that I've been trying to use for the last 6 months!!! I added 1.5 c of homemade almond milk (not sweet like the store-bought kind) and added the seasonings, leaving out the salt, sugar, butter and flour. WOW!!! I am going to make this again, doubling the batch for freezing (leaving out the almond milk) because it is awesome and will make such a beautiful quick meal when I need it!!!!

Pub-Style Vegetarian Chili

woohoo!!! homerun! my family has just started the vegetarian journey and when I heard "you know what would be really good? chili!" I came here, selected this recipe and wow, it is fabulous!!! followed along pretty well-added TVP rehydrated in beef broth and used beef broth instead of water (only 1 cup instead of 2), skipped the wine and rinsed my beans. I also used one can of tomato sauce (15 oz) instead of the whole tomatoes. IT SMELLS AWESOME AND TASTES EVEN BETTER!!! so thankful for good food that's really, really good for our bodies! it's been almost a month and I DON'T MISS MEAT AT ALL!!!

Tofu Salad

so...some will think it's not fair that I gave it 4 stars when I'm not technically rating the original recipe BUT if not for this recipe I would have never had what I had just a short half hour ago! AMAZING!!! I always read through the reviews, for what they're worth. Initially I was very turned off by the sweet chili sauce. It's so goopy! Not my fave. But then someone said leave it out and add some sugar. BRILLIANT!!! So I began by pressing the tofu. then I shredded half a head of cabbage and grated up one carrot and threw in a big handful of peanuts. Looked good already. I made up the marinade omitting the chili sauce and added sugar. Not so good but really what did I expect right? So I added a T of rice wine vinegar. Hmmm...then I added another, a squeeze of lemon and a total of 1 T sugar. OH WOW! I poured that over the cabbage, totally forgetting its original intent to marinate my tofu! so I just threw the chopped up tofu in, mixed it all together and yummed my way through half the bowl. I literally had to stop myself from eating the whole bowl!!! OH WOW!!! hence the 4 stars-because on my own I never would have come up with this...and believe me I will probably eat the other half tonight for dinner and I know I will have this at least once a week from now on! I LOVE LOVE LOVE IT!!!

Tofu Vindaloo

Oh wow, thank you sidnam!!! I was so excited when I saw this recipe and the positive reviews! My daughter and I love Indian food and though I've tried many times to make something delicious at home (with an Indian flavor) I have been seriously unable!!! YOUR RECIPE IS TOTAL SUCCESS!!! I did sautee my mushrooms with the veggies in the beginning and I only used one good sized onion. I also used 6 cloves of garlic as we love, love, love garlic and it's so good for you! And I had to use lite coconut milk cuz...well, healthy eating dictates it!!! Otherwise I followed the recipe to a T!!! I will say that I did end up buying an American-looking curry powder. I believe that success and failure will depend largely on that one ingredient. Some have mentioned that it's bland. I agree if you mean non-spicy-hot! But for me and my simple tastebuds it was just perfect. I figured my hubby who likes spicy food can just add a squirt of sriracha and call it a day! But otherwise this is seriously flavorful goodness! My daughter is at college right now but I can't wait for her to come home so I can show off my new skills...all thanks to sidnam!!!
