Cream of Chicken Breasts

Great starter recipe! I use 2 cans cream of chicken, chicken broth, seasonings and a container of sliced mushrooms. So tender and delicious! I usually serve it with rice or mashed potatoes. Very simple, yet super satisfying.

Fresh Rhubarb Pie

Great recipe! Make sure you follow recipe exactly. I used foil around the edges of the crust and used a foil lined cookie sheet underneath! Super easy and delicious recipe for rhubarb.

Best Chocolate Chip Cookies

All I can say is WOW! I followed the recipe exactly (except omitted the walnuts) and the cookies turned out amazing. I thought it was very strange at first, but it all worked. This recipe is a keeper!

Yummy Sweet Potato Casserole

So delicious! Doesn't need any changes. I like to prepare the dish the night before and refrigerate overnight until ready to bake. Much easier the day of. I have made this twice, for Thanksgiving and for Easter. A hit on both occasions with different families (mine and my boyfriend's). Thanks for the great recipe!

Downeast Maine Pumpkin Bread

I thought this recipe was good. I made two versions - one with less oil only 1/2 cup and one with the whole 1 cup. The one with less oil was slightly dry the one with 1 cup was just right. I also used half whole wheat flour and half AP flour. Only other change I made was to cut down the sugar, I used 1 cup brown sugar and 1 cup white sugar. Both batches turned out pretty good and I used a cream cheese frosting to top.

Rhubarb Cheesecake

Really like this recipe! I made it with all purpose gluten free flour because we have some intolerance in the family. Was a little worried how the flour would do, but it was good. After baking the crust with rhubarb I noticed a lot of liquid from the fresh rhubarb. I used a baster to suck out some excess liquid before adding cream cheese mixture. After the 30 minute baking time, I turned the oven off and left it for an additional 15 minutes. Cheesecake consistency was perfect! I didn't have issues with crust sticking, but I made sure to grease the pan well.

Slow Cooker Salisbury Steak

So delicious! I made this using one can of cream of mushroom and one can of cream of chicken. I also added baby Bella mushrooms, so good. This is one of the best meals I've made from here.

Rhubarb Bars

This is a great recipe for rhubarb! I made some slight adjustments - I added 1/2 cup sugar to the crust and used one cup white sugar and one cup brown sugar for the topping (instead of two cups white sugar). Turned out great and my kids loved it. A very nice sweet and tart recipe added to the collection!

Quinoa and Black Beans

I really liked this recipe as a side dish. Super healthy, lots of flavor, and it tastes great. If I'd do anything different next time, I'd add one less can of beans. I like the quinoa more than beans.

White Bean Chicken Chili

This is a great recipe with a few slight tweaks. I couldn't find canned tomatillos so I bought a tomatillo salsa instead. I used a bag of frozen corn instead of the fresh. I also stir in a container (16 oz.) of sour cream at the end. One last thing I do is add a Tbsp. of brown sugar. It seems weird - but it really works! The brown sugar balances the spicy flavor and gives it depth.

Tater Tot Casserole

This was a pretty good meal with several tweaks. I used a can of cream of mushroom and a can cream of chicken. I felt it needed more than one can and I was right. I added a bag if frozen mixed vegetables to the pot with the meat mixture. I also omitted the ketchup. I baked for 25 minutes added about a cup of shredded cheddar cheese to the top and baked for another 5 minutes.

Zucchini Brownies

Great flavor. I would suggest to bake for longer, maybe 35 minutes. Center brownies were way too gooey. The frosting is also VERY rich. I could have done without it.
