Sweet Potato and Banana Smoothie

This was fantastic! I did alter it slightly - no milk on hand. I used vanilla almond milk and pumpkin pie spice rather than just cinnamon. I also added 6 ice cubes to make it frostier. The best smoothie I think I've ever had!

Onion Jam

I didn't have red wine vinegar but had balsamic so used that instead. This was quite good - except using the balsamic causes the mixture to turn almost black. I'm going to use it at an upcoming July 4th cookout to accompany a cheese board.

Rhubarb Cake I

This was ok. I was concerned with the ratio of sugar to flour when I read this and so only used 1 1/4 c. white sugar. It was still too sweet and I even used 3 c. rhubarb based on other recommendations. If I try this again, I'll cut down to 1 c. white sugar. I also was concerned that the ingredients didn't list baking powder. I will add 1 t. next time since it was a little flat. Nice and moist though. I think if the proportions can be straightened out, this will be a great cake to use for my rhubarb.

Rich Cheese Bread

VERY good. This was the best (and prettiest) bread I've ever made. And EASY! I used colby/jack cheese since I didn't have American. I'll try this again for sure and would like to experiment w/other add ins. Maybe spinach (squeezed really dry) and swiss cheese cubes? mmmm

Pumpkin Loaf

Very nice. It came out of the pan great too which can be a challenge w/nut breads. Based on other comments, I increased the spice. I used a whole tablespoon of pumpkin pie spice blend.

Grain and Nut Whole Wheat Pancakes

Absolutely the BEST pancakes ever - moist, tender, yummo. I will never make plain pancakes again. These were just like the IHOP version. The only things I did differently was used 2 eggs according to other suggestions. I used 1 c. whole wheat and 1/2 c. white flour because I didn't have enough whole wheat. And I used powdered buttermilk made according to pkg. directions to = 1 1/2 c.

Watermelon Agua Fresca

Very good and refreshing. I used frozen watermelon chunks to make a slushie. And I just tossed everything into the blender including mint and juice from 1/2 lime because I'm basically lazy. My son really loved it.

Roasted Vegetables

YUM! Made this for a family dinner. I added white mushrooms, fennel, and cherry tomatoes to the listed veggies. The family freaked! Note: you can use dried herbs. 1 t. dried = 1 T. fresh.

Fluffy Whole Wheat Biscuits

Very, very good. I noticed this did not call for any baking soda and it freaked me out so I added 2 teaspoons. After tasting them, I decided they would be super awesome w/some sauteed onion, bacon and cheese mixed in so I'll try that next time!

Fabulous Beef Tenderloin

Excellent. I used boneless, skinless chicken thighs. To cut the salt factor indicated by other users, I substituted 1/4 c. Worchestershire for 1/4 c. of soy and added a few big squirts of honey. Brown sugar would be good too. My son, chef wannabe, raved about it and was shocked when I told him how easy it was.
