Tangy Ginger Lime Salad Dressing

A little crazy on the soya sauce, even though I cut the amount suggested in half. I found it a very, very salty dressing, not something I enjoyed much on a salad. I compensated this time by adding a whole lot of fruit to my salad, but I probably won't make again. Thanks anyway.

Oven Roasted Red Potatoes and Asparagus

Safe recipe. I didn't have any thyme, so missed that addition. Only other change I made was to add some onion powder to coat the potatoes. I found the cooking time was less than stated, especially for the asparagus, which I threw in about 10 minutes from the end. I did find the garlic was overcooked, even burned in some cases. Perhaps it should be thrown in half way through, rather than cooking the whole time. Overall, pretty good recipe.

Flourless Chocolate Cake II

Deliciously rich and wonderful! A very easy recipe, not daunting for the non-baker like me. A hit -- looks and tastes a lot more impressive than it really is! A couple of notes: 1) I just melted butter and chocolate together in a pot on low heat, no double boiler; 2) mine crumbled into pieces when it came out of the pan, despite greasing and powdering with cocoa. I solved this problem by icing with Hard Chocolate Glaze from this site. Totally hid the problem. I also dipped some strawberries in this glaze.

Very easy and very tasty! Mine didn't harden completely, but was more like a thick, sweet icing. Good though, and handy for cake and brownies.

Banana Wheat Bread

I made this into a dozen muffins, and baked for about 22 minutes. Overall, I found them good, certainly not sweet like some banana breads, but a little dry. Perhaps baking them that long was too much, or perhaps more than 3 bananas would have helped, which is what I used.

Broccoli Cheese Bake

Great tasting dish. I expected a little more cheese "sauce" rather than eggy-bake (like a quiche) but the taste was delicious, and we will definitely have it again in our family. I used onion powder, cheddar and gruyere cheeses, and whole wheat flour, otherwise, followed the recipe exactly.

Banana Oatmeal Crumb Cake

Great tasting and easy! I used whole wheat flour, and nearly 3 full bananas. The cake was moist, beautiful and delicious. For a non-baker, I couldn't believe I'd made it!

Whole Wheat Blueberry Pancakes

Great recipe. Just add a bit more milk (or soy milk) and you're good to go! I make all the dry stuff in large, large batches, store, and then when ready, measure out the right amount of "mix" and add the wet. This way, we're all ready in the mornings!

Spinach Brownies

This is GREAT! It's like a quiche without the work! Changes I made were to sautee the onion, and when it was nearly done, throw in the spinach to sautee it rather than boil it. (I used fresh spinach.) I used 1/2 feta and 1/2 cheddar cheese, used whole wheat flour, and I reduced the butter by half. Really great recipe, and I'll use over and over I'm sure! Great find!

Green Rice I

This is a good recipe that you can adapt to your liking. For example, I used soya milk with a little margarine instead of the evaporated milk, used brown rice, added a little broccoli, and put in some dried basil, cayenne and garlic powder. My two year old gobbled it up, and my husband and I both liked it too.

Lasagna Roll Ups

This is a great idea for a recipe. I thought the cheese blend left a little to be desired in terms of taste, so next time I will liven it up by adding garlic powder, maybe some different cheeses and something like marinated artichoke hearts. But really good idea, and they look really neat. Worth the time it takes to prepare -- spent mostly on the rolling of each noodle.

Delicious Black Bean Burritos

This is great! Easy, fast and really flexible recipe. As some reviewers found it a little bland, I added one fresh tomato and some "bean mix" spices I had, and they were really delicious. I also melted cheddar cheese over the top. They freeze well when wrapped in tin foil and make for good, quick lunches when needed! Thanks a lot -- great idea.

Curried Carrot Soup

This is really good!! When you read the ingredients, it looks so simple, and it's easy to guess that taste will be sacrificed as a result. No way! I made it exactly as stated, and it was delicious -- even better (5 stars!) because it's so simple. Hardest part is chopping 2lbs of carrots! Thanks a lot.

Curried Lentils

I give this a 4, but hesitantly, and wavered between 3 and 4. It's a good recipe, and so easy, but I found it a bit runny for my taste, and let it simmer for a long time to battle that. I doubled the recipe, but only multiplied the coconut milk by 1.5 (note milk, not cream, based on other reviews), and I'm glad I did. Also used curry powder instead of paste to reduce the "heat" because my 1 year old was going to eat it. I'll probably make again mainly because it's so easy.

Apricot Lentil Soup

DEEEELISH!! I love traditional lentil soup, but this one is so interesting and different. Absolutely love it. I didn't blend 1/2 at the end because I really didn't feel it needed it; had a nice lentil texture just as is. I didn't have any thyme, so added just a touch of tarragon in its place. I will make this again and again (and again)!
