Cheesiest Potato Soup

Nice! Easy! THICK! I really liked this recipe. I made some minor changes -- used veggie broth, added some white wine, used fresh dill (makes a nice difference), and sauteed some celergy in with the onions to add flavour as well. I also used a combo of cheddar and swiss cheeses, and topped with just a little herbed havarti. This recipe allows you to make these kinds of changes based on what you have in your fridge, which really works for me!

Crackle Top Molasses Cookies

These are great! Look good too. To get them rise like nice, THICK cookies, be sure that the batter is quite dry and firm, as the recipe says. For me, that required a little less than 1/4 more cup of flour. These are easy to make, and I make them a lot. I often replace the cloves with nutmeg.

Grilled Eggplant, Tomato and Goat Cheese

Good little appy. I liked it as is, although with a little basil sprinkled on would be a nice addition. My husband came home from work and stuck his between two pieces of rye bread for a sandwich! Good idea, I thought!

Coconut Tofu Keema

Nice dish for every now and then for us, served over garlic couscous. I halved the recipe, then after tasting it, increased both the coconut milk and the curry powder. I didn't have carrots, but used spinach instead, and it was good.

Malaysian Quinoa (Vegetarian)

I was really excited to try this, as I cook this kind of recipe a lot, and love asian food. However, this was just not good, in my opinion. In an attempt to improve it, I added sesame oil, more peanut butter, herbed-garlic-salt, increased the coconut milk, added yellow & orange peppers, and still it was so-so. Sorry. Won't bother with this again.

Gobble Up Granola Snacks

As is, I give it a three, my main complaints being that the recipe is crumbly and very sweet. However, as lots of others have said, I look forward to playing with the ingredients and the measurements of each to get to something that sticks together better, and that doesn't fall apart.

African Peanut Soup

As good as expected. I agree with others that spices can -- and should -- be increased. Certainly twice the chili powder, and a little cinnamon and/or cumin would be good too. I used various coloured bell peppers, all natural peanut butter, and white rice to cut down on the cooking time. Delicious. I bet it would be great with cilantro on top!

Roasted Pears with Caramel Sauce

You know, this is really good! It's a bit of a misleader to say "Caramel Sauce" as it isn't thick as that suggests, but rather runny. However, I don't really think it matters. I used very ripe pears, so I cut down the baking time by 10 minutes. The pistachios are GORGEOUS with this recipe.

Sweet-Potato Muffins

I did find these pretty dense, but that isn't to say they are bad. Don't expect fluffy, light muffins, but rather something unique, heavy and delicious. I really liked these. I used applesauce in place of the oil and used a cranberry/raisin/seed/nut mix for the walnuts and raisins. Very good!

Pear Bread I

Great recipe! I did make some of the same changes as others -- applesauce for the oil, added nutmeg, cut sugar nearly in half, substituted whole wheat flour, made into muffins (baking for 17 minutes)... All in all, I think this deserves 5 stars. Nice change to the usual banana bread.

Banana-Zucchini Bread

Some changes I made: half whole wheat flour, plus a little wheat germ for nutrients; increased brown sugar to one full cup, then ommited white sugar completely; increased zucchini by half a cup; and made into muffins, baking for 20 minutes. Definitely good enough to make again as written in the recipe, or with changes like these.

Cream of Celery Soup

I started by cutting this recipe in half, as it's huge if you don't. Then I replaced one cup of milk with a cup of cream to thicken it up a bit, and replaced the chicken stock with vegetable broth to make it vegetarian. Like others, I hand blended the vegetables right in the soup instead of removing them. I thought the soup was good, but it didn't really get thick-thick. Also, I wasn't sure of the weight of celery, but for the recipe cut in half I used one full "head" of celery.

No Bake Cookies III

Sadly, these were a disappointment. They never did harden, even by the next day. And they were very, very, very sweet, despite my cutting back to 1.5 cups of sugar as others suggested. I don't know why they didn't harden... I think it's worth a little more effort to get a good, reliable cookie. Sorry.

Sweet Potato Corn Bread

I've never made corn bread before, and this was delicious. I did find it a little bit dry -- perhaps the recipe should read "2 2/3 *packed* sweet potatoes". I used two large ones, but next time I will definitely use three large ones. Otherwise, sweet tasting, good looking and easy to make. I might add a chili pepper next time.

Janet's Rich Banana Bread

Amazing! I love this recipe -- it is moist and sweet and delicious. I use half whole wheat flour, and I do mash the bananas just a little bit once they are in the batter. Can be made into muffins, which bake about 16 minutes or so.

Dill Potato Salad

I am so pleased to find a recipe that doesn't use mayo! This is excellent. I added a green onion and used fresh parsley. Also, I didn't peel the potatoes -- much of their nutrients are in, or just below, their skin. Thanks for a great potato salad.

Tofu Parmigiana

Really good! And fun and easy to make, too. I used herbed tofu, and dipped this into a beaten egg to help the bread crumbs stick. I did this part in advance, then assembled the whole thing just before baking it. A hit for the whole family, including my 2 year old!
