My favorite things to cook
All things vegetarian -- I love Indian, Mexican, cheese dishes, and Asian foods. Who says side dishes have to be side dishes? We eat a collection of healthy meals.
My favorite family cooking traditions
The other veggies in my family and I are always in charge of veggie foods for holidays. It's fun -- and with an inspirational brother in law who loves to cook, we play the "what can we make from items in the fridge game." He's incredible with it... give him 5 ingredients and he'll make a vegetarian masterpiece.
My cooking triumphs
Lots from allrecipes.com. I love making dinner for lots of meat eaters, serving only vegetarian food, and having them all satisfied and not missing meat at all!
My cooking tragedies
When I first moved off to university I could do nothing but toast and cereal. Everything was a disaster. I took a vegetarian cooking course, and learned so much.

Harvest Pasta Bake
I used this recipe as a starting place. The squash and the cream cheese made a good "sauce" after I roasted the squash and then heated it up all mushy with the cream cheese. I added a fried onion to that too, and some garlic powder -- just a touch. When I rolled all of this sauce over the noodles, I thought something else was needed, so I added about 1/2 cup of jarred tomato sauce, then sprinkled some cheese and some bread crumbs over the whole thing. It was a good meal. Got some veggies into my kids! I'll do something like this again, and appreciate the starting place.

Black Bean Vegetable Soup
So good! And so flexible! I have skipped the tomatoes, and while not as good, it's still fine. You could add more garlic for sure, decrease beans if you wanted to, add other veggies. It's great! Love that it's partially-blended. I just used a hand-blender into the pot. Probably good with cheese on top too, with crusty bread on the side... I was just too hungry to try once I had it cooked!

Quinoa with Sweet Potatoes and Broccoli
Made some changes like using coconut oil (not sure I really liked this change, actually) and added garlic and craisins. Overall, good dish, and I'll probably make again.
