Fluffy Carrot Muffins with Cream Cheese Frosting

I followed the directions exactly and they ended up super oily and the taste was overwhelmed by the taste of vegetable oil. Maybe I'll try again later using applesauce instead of so much oil, like other people suggested.

Chicken Pot Pie VIII

Boiling the veggies beforehand is a must, but other than that this recipe is so yummy. It does make too much filling, but that's what other pie crusts are for! ;)

Strawberry Shortcake

Wow. Just... wow! I am in love with this recipe. I changed 2 things: cut down the baking powder to 2 tsp like others suggested and used butter rather than shortening. For the first time, I really enjoyed strawberry shortcake and didn't feel like I was eating my berries on a damp sponge. Never again will I buy the grocery store "shortcakes" if I can help it!

Steak Tips with Mushroom Sauce

This was easy, fairly quick, and lovely! Rather than grill the steak, I cut it into bite-size pieces and browned it before cooking the mushrooms, etc.

No Bake Cookies III

These turned out exactly as my mom used to make them. Yum! I only boiled it for 1 minute and they're a bit soft but hold together fine. I'm at a high altitude, though, so maybe that makes a difference?

Orange Soy Pork Loin

The rosemary in this seems kind of out of place with the orange/soy mixture. It ended up overpowering any sweetness that the orange contributed. Could be good with some tweaking, but only so-so as is.

Baked Teriyaki Chicken

Everyone from my picky husband to my super-picky 5-year-old was impressed with this recipe! I did make two small changes... I used low-sodium tamari rather than soy sauce because I like the taste of tamari better. (Trust me, whatever you use, you want to make sure it's low sodium.) And I used chicken tenderloins, cooked them at 350 for 20, basting every 5 minutes. So. Yummy.

Baked Potato Soup II

This is an awesome basic potato soup, not runny or thin. I used whole milk and it was just touch too thick, so I think I'll add some water in next time or follow the skim milk suggestion. I also added onion powder, garlic powder, and black pepper to the soup while it was cooking to spice it up a bit. Even my 5 year old enjoyed it, and he has expressed his undying hatred for potato soup in the past. For that alone it deserves the highest marks!

Cameroonian Fried Spinach

Quick, easy, and tasty. I used a LOT of garlic powder to get it to taste the way I wanted it to, so maybe minced fresh garlic would be a better choice for people who like a lot of flavor. This is going to replace my normal, boring spinach at the dinner table from now on.
